Spices Used in Azeri Cuisine

Azerbaijan's cuisine is based on meat, fish, vegetables and fruits, with an abundance of herbs, spices and aromatic additives.

Azerbaijani cuisine varies greatly from region to region, and each region has its own “brand” of food. For example, kufta bozbash is the signature dish of Sheki, gyurza is similar to Russian dumplings in Baku and kabab is famous throughout Azerbaijan.

Cumin

Cumin is one of the most commonly used spices in Azeri cuisine. It's an essential ingredient in curries and tamales and is often used as a spice blend, such as garam masala.

It is also a popular spice in chicken and lamb dishes, including the famous doner kebabs. Whether it's used in a savory or sweet dish, cumin adds a warm and earthy flavor that is very versatile.

While cumin is available in both whole seed and ground powder, you'll notice the most flavor when using whole seeds because the heat and time it takes to release the flavor allows for more intensity. If you want more intense flavor, try lightly roasting the seeds and then grinding them with a spice grinder or coffee grinder to get the most out of your recipe.

Cumin is an excellent addition to any recipe and adds a rich, nutty flavor that is both spicy and warm. It is also a versatile spice that pairs well with many different ingredients, including carrots, cabbage, parsnip, onions, peppers, tomatoes, potatoes, pomegranate, dates, and rice.

Basil

Basil is a staple ingredient in a variety of Azeri dishes. It adds a sweet, aromatic flavor to foods that are typically savory. It’s also known for its antioxidant properties, which help fight free radicals in the body that cause oxidative stress.

Fresh basil leaves can be incorporated into a wide variety of recipes, including pasta sauces, soups, and salads. They also make a great garnish for other ingredients.

The most common type of basil used in Azeri cuisine is sweet basil, which has a high concentration of the chemical agent eugenol that gives it a clove-like aroma. Lime and lemon basils have a similar scent, but they have a higher concentration of limonene, which is another antioxidant that helps fight free radicals.

Basil is an easy plant to grow in a garden or container, and it does not require much care. Water regularly and mulch the soil to keep it moist. However, it is important to keep the plants well-drained so that they do not become overgrown with weeds.

Sumac

Sumac is a spice that can be found in many different cuisines, but it's often underappreciated and underused. Known for its sour, zesty lemon-lime flavor, sumac is used to add a zing to a variety of dishes from across the world.

It can be sprinkled on salads, hummus, marinades or dressings, tzatziki, and baba ganoush to make your favorite dishes pop with tangy goodness. It's also great in roasted vegetables, fried eggs, and grilled fish.

You can find sumac in most grocery stores. Just make sure you read the ingredient label before buying.

In Azeri cuisine, sumac is a key ingredient in gutabs (Azerbaijani patty pies) and qutab (flatbreads that can be filled with meat or greens). It pairs well with choban salaty, an Azerbaijani summer salad made from cucumber, tomato, bell pepper, and various herbs like coriander, dill, mint, and basil.

Cinnamon

Cinnamon is one of the most popular spices used in Azeri cuisine. It adds a warm, sultry flavor to dishes and is also used for sweets.

Azerbaijani food is influenced by Middle Eastern, Turkish and Indian cuisines. It has a rich, spicy flavor that makes it deliciously unique.

The most common Azeri dish is kebab, which can be made with a variety of meats and vegetables. There are two types of kebab: tika-kebab, which is cubed and threaded on skewers; and lula-kebab, which is ground meat wrapped around the skewer.

Other Azeri foods include qutab, which is similar to pizza in Italian cuisine. The dough is thinly rolled and filled with all kinds of flavors like pumpkin, onions, herbs and cheese then cooked on a sadj, a cast iron pan.

It's more than just a spice. It is an important ingredient that gives flavor and depth to bland dishes.

There are thousands of Thai recipes, but very few include the authentic flavor. Let's find out how to add these wonderful flavors to your dishes.

Thais have been cooking with herbs, spices and other flavors since ancient times. The name Thai originates from the Sanskrit word for "to cook."

Many Thais love spicy foods, even today. This preference is often attributed to the hot weather in Thailand, which makes it difficult to keep warm without something hot to drink. Thais also consume more chili peppers that Americans or Europeans.

Thai cuisine uses both dry and wet spices. Dry spices are generally ground, while wet spices can be crushed or pounded finely.

How To

How to store spices for cooking?

I'll show you how to store spices properly for best results. First, let's understand how foods are stored.

Because light can diminish the flavour of spices, they should be kept in sealed containers. This is due to oxygen combining with organic compounds, such as spices.

To prevent oxidation of spices, keep them in dark cupboards. Spices will lose their flavour quickly if the conditions aren’t met.

You can preserve the flavor of spices by keeping them in sealed jars, away from direct sunlight.

For a flavoured beverage, add herbs and spices. Mix two teaspoons of ground cinnamon and 1/2 cup warm water. Stir well. Serve immediately by adding a squeeze lemon juice.

You can add dried herbs and spices to soups, stews, casseroles, pasta, rice dishes, salads, and desserts. Place the spice mixture on top of the dish and allow it to rest for 5-10 mins before serving.

Leftover cooked vegetables, fruits and meats, as well as leftover cheese, breads, crackers, cookies or cakes can be added to favorite recipes for snacks.

If you want to take advantage of the flavours of fresh herbs and spices, chop or tear them up and add them to foods while they're still hot. You can also freeze spices and herbs by placing them in muffin cups or ice trays and freezing them. Transfer frozen items to zip-top or freezer bags.
