Which Thai spice do I need to cook Thai food at home?

You will need to know five key spices in order to make authentic Thai food at your home: cayenne pepper, coriander seeds and turmeric. Each of these ingredients has its distinct flavour profile and plays a vital role in creating delicious dishes.

Cinnamon brings out the sweetness of black pepper, while white pepper enhances the savoury flavours. Coriander seeds add a spicy kick, while turmeric gives curry powder its signature yellow colour. Cayenne peppers bring the heat while cilantro adds freshness. Cinnamon adds complexity and depth to any dish.

What's the Difference Between Cooking With Whole vs. Ground Spices?

There is no difference in cooking with whole spices and cooked with ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.

However, the price difference is substantial. Because of the labor involved in making whole spices, they cost more. The flavor is well worth the effort.

If you purchase whole spices in bulk, you might get an additional discount. You might get a discount if your entire bag is of cinnamon sticks.

The same applies to nutmeg and cloves, ginger or cardamom. This can help you save money on spices if you buy them in bulk.

Ground spices last much longer than whole spices. Ground spices quickly lose their potency due to oxidation.

The main reason we recommend whole spices over dried is that they can add lots of flavor to recipes.

Whole turmeric can be used to make delicious curry. For chicken dishes, whole coriander seeds can be ground to make a spice blend.

It takes time to grind spices. It makes sense to purchase large quantities of whole spices when you are buying them. So you don't run short of spices.

Are You able to make curry paste?

Curry paste contains dried chillies and shallots, galangal roots, lemongrass (kaffir lime leaf), garlic, shrimp paste, sugar and salt. It is used extensively in Thai cuisine.

Curry paste is one of the most popular condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.

It is very easy to make it at home. Follow our step by step guide below.

Step1 - Prepare Ingredients

  • Before you start making this recipe, prepare all ingredients.
  • Begin by peeling and cutting shallots into small pieces (about 2 cups). Then, cut the galangal roots into small pieces (approximately 3 inches in length), and then set aside.
  • Next, you will need to peel and slice the garlic cloves (about 4 cloves). Peel and finely mince lemongrass stems (about 1/2 inch thick).
  • Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
  • Next, trim the kaffir lime leaves into strips about 5 inches in length. Remove the white part of the stem and set it aside.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Final, weigh out salt and sugar.

Step2 - Grind Ingredients

  • Grind all ingredients together until smooth.
  • The texture should be very similar to peanut butter.
  • Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.

Step3 - Add Coconut Milk

  • Mix coconut milk with the mixture.
  • You should slowly add the coconut milk so that it doesn't get too sticky.
  • You can reduce the amount of chillies and increase the quantity of galangal root if you prefer it less spicy.
  • For a more spicy taste, increase the amount of chillies and reduce the use of galangal root. The end result should be delicious.

Step4 - Serve

  • Top it with your favorite foods.
  • Enjoy!
