Black pepper enhances the savoury flavors of curry powder, while cinnamon gives it sweetness. Curry powder is given its characteristic yellow colour by turmeric and coriander seed. Cayenne peppers are hot, and cilantro adds freshness. Finally, cinnamon adds depth and complexity to any dish.

The process of grinding spices takes a lot of time. It is sensible to purchase large quantities when buying whole spices. That way, you won't run out of spices too fast.

Are You able to make curry paste?

Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It's used extensively in Thai cuisine.

It is easy to make your own at-home recipes! Follow our step-bystep guide below.

Step1 - Prepare Ingredients

  • Before you start this recipe, make sure that all ingredients are prepared.
  • To begin, you will need to peel and chop shallots (about 2 cups). Then, cut the galangal roots into small pieces (approximately 3 inches in length), and then set aside.
  • Next, slice four garlic cloves. Peel and finely mince lemongrass stems (about 1/2 inch thick).
  • After that, you will need to crush dried red chili peppers (about four tablespoons) before removing the seeds (optional).
  • Next, cut kaffir lime leaves into thin strips (about 5 inches long). The white part of your stem should be removed and put aside.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Measure out the sugar and salt.

Step2 - Grind Ingredients

  • Blend all ingredients until smooth
  • The texture should be very similar to peanut butter.
  • Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.

Step3 - Add Coconut Milk

  • Add coconut milk to the mixture and mix well.
  • Slowly add coconut water to prevent the paste from getting too sticky.
  • If you prefer less spice, add less chillies to the recipe and more galangalroot.
  • For a more spicy taste, increase the amount of chillies and reduce the use of galangal root. The end result should be delicious.

Step4: Serve

  • Serve with your favourite foods.
  • Enjoy!
