For the Duck
1 to 4-5 lb whole duck. Choose "Air Chilled" if you want the crispiest skin possible
Five teaspoons Sichuan five spices
4 tablespoons maple syrup
3 tablespoons soy sauce
1 Tablespoon Chinese wine
1 teaspoon brown sugar
1 clove of garlic, chopped but not crushed
1" x 3" shaving of orange zest
2 tablespoons salt
The Stuff
1" fresh ginger cube
6 cloves garlic
1/2 orange chopped
2 scallions with the green ends only, left over from the fixings (below).
Pancakes
2 cups All Purpose flour
1 cup boiling water
The Fixings
Hoisin sauce
Cucumber, thinly cut lengthwise
Scallion, thinly cut lengthwise
Carrots, also delicious

2 to 3 days in advance
Thaw the duck Rinse under cold water. Take great care to separate the skin and meat from the breasts and back. Be careful not to pull at the skin. It will be easier to remove jewelry from your hands.

Bring 8 cups water to boil. Put the duck in a colander. Pour the boiling water over the duck. Divide the breasts and back. You will immediately notice a tightening of the skin. This will shrink the pores. Allow the steam to evaporate. Blot excess water with a paper towel.

Mix the marinade. Toast 3 TSP five spice powder 30 seconds on a small skillet over low heat. Maple syrup, brown sugar, chinese red wine, maple syrup, soy sauce and orange zest. Turn off the heat and bring to a simmer.

Combine 2 TBS Kosher Salt and 2 TBS Five Spice Powder in a small bowl.
Marinate the duck Use the basting brush to coat the duck's interior with the marinade. The rest of the mixture can be stored in an airtight container in your fridge until you are ready to roast the duck.
Place the duck on a cooling rack and place it on a baking sheet with a rimmed baking tray. Use the Five Spice and Kosher Salt to coat the duck's skin. Keep covered in the refrigerator for at least 1-3 days.
Day:
Fill the duck Take the duck out of the refrigerator. The skin should feel almost dry and have a leathery texture. Let the duck rest at room temperature for 30 min. Then stuff the cavity with ginger and garlic. You can tie the legs with baker's twine if you are making a rotisserie. They can be left open if baking in the oven.

Roast the duck. Preheat your oven at 450°F. Place the duck breast-side up on a rack placed in a large roasting tray. Bake for 10 minutes.

Reduce the temperature to 350 degrees and bake an additional 20 minutes.

Flip the duck breast-side down and remove it from the oven. Bake for another 20 minutes.

After checking that the internal temperature has reached at least 165°F, remove from oven. Allow to rest for 20 minutes before you begin carving.

Mix the flour and 1 cup of water in a large bowl. Mix until the dough is elastic and smooth. Cover the bowl with plastic wrap and place back into it. Allow the dough to rest for 20 minutes.

Make the pancakes Divide the ball into 18 equal parts. Roll the small balls onto a floured surface to make thin pancakes.

Make the pancakes Heat a steamer basket, or heat a pan with olive oil and a little butter in a cast iron or nonstick skillet. To keep warm, stack them on a plate. Wrap them in foil until ready to serve.
To serve
Use hoisin sauce, scallion and cucumber to dress a pancake. Enjoy!

What is the difference between cooking with whole spices and using ground spices? Ground Spices?

There isn't any difference between cooking with whole spices and ground spices. After harvesting, all spices are ground. The quality is the same.

The price difference is however significant. Whole spices are more expensive due to the labour required for processing them. But the flavour is worth it.

If you purchase whole spices in bulk, you might get an additional discount. If you buy a whole bag of cinnamon sticks, you may get a discount.

It is the same for cardamom and cloves as well as ginger, ginger, nutmeg, and ginger. You might be able to save money by buying these spices in bulk.

Whole spices also last longer than ground spices. Because ground spices lose potency quickly from oxidation, this is why whole spices last longer than ground spices.

However, the main reason we recommend whole spices is because they add character to recipes.

Curry paste can be made with dried chillies. It is used extensively in Thai cuisine.

Curry paste is a popular condiment in Southeast Asia. It adds a unique flavour to many dishes, such as curries, soups, stir-fries, salads, rice dishes, noodles, and desserts.

It is very easy to make it at home. Follow our step by step guide below.

Step1 - Prepare Ingredients

  • Before starting the recipe, you will need to prepare all ingredients.
  • To begin, you will need to peel and chop shallots (about 2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
  • Next, remove and cut the cloves of garlic (about four cloves). Finely chop the lemongrass stems to about 1/2 inch in thickness.
  • Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
  • Next, cut the kaffir-lime leaves into thin strips (5 inches). Next, remove the white part from the stem and leave it alone.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Final, weigh out salt and sugar.

Step2 - Grind Ingredients

  • Blend all ingredients together until smooth.
  • It should have a texture similar to peanut butter.
  • Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.

Step3 - Add Coconut Milk

  • Mix in coconut milk and stir well.
  • To prevent the coconut milk from becoming too sticky, slowly add it.
  • For a milder taste, use less chillies and more galangal roots.
  • You can make it more spicy by adding more chilies and less galangal root. You should enjoy the final product.

Step4 - Serve

  • Top your favorite foods with this topping.
