Curry paste can be made with dried chillies. It is used extensively in Thai cuisine.
One of the most widely used condiments in Southeast Asia is curry paste. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.
It's easy to make at-home! Follow our step by step guide below.
Step1 - Prepare Ingredients
- Before you start this recipe, make sure that all ingredients are prepared.
- Start by peeling and chopping shallots (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
- Next, remove and cut the cloves of garlic (about four cloves). Finely chop the lemongrass stems to about 1/2 inch in thickness.
- Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
- Next, slice the kaffir lime leaves in thin strips of about 5 inches. Take out the white part and place it in a bowl.
- Once the shrimp paste has been drained, rinse it and then coarsely crush it.
- Measure out the sugar and salt.
Step2 - Grind Ingredients
- Mix all ingredients until well combined.
- The texture should be similar to that of peanut butter.
- If you would like to reduce the amount oil in your dish, you could substitute water for some of it.
Step3 - Add Coconut Milk
- Mix the coconut milk into the mixture.
- You should slowly add the coconut milk so that it doesn't get too sticky.
- For a milder taste, use less chillies and more galangal roots.
- You may prefer it hotter, so add more chilies or less galangalroot. The end result should be delicious.
Step4 -- Serve
- Serve with your favourite foods.
