Do you know how to make curry paste?

Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It's a common ingredient in Thai cuisine.

Curry paste is one the most loved condiments in Southeast Asia. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.

It's easy to make at-home! Just follow our step-by-step guide below:

Step1 - Prepare Ingredients

  • Before you start making this recipe, prepare all ingredients.
  • Begin by peeling and cutting shallots into small pieces (about 2 cups). Next, cut galangal root into small chunks (about 3 inches) and put aside.
  • Next, slice four garlic cloves. Next, peel and mince the lemongrass stems (about 1/2-inch thick).
  • Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
  • Cut the kaffirlime leaves into small strips, approximately 5 inches in length. Set aside the white portion of the stem.
  • After draining the shrimp paste, wash it well and then coarsely smash it.
  • Measure out the sugar and salt.

Step2 - Grind Ingredients

  • Combine all ingredients and blend until smooth.
  • It should have a texture similar to peanut butter.
  • Not to worry if the dish contains too much oil, you can use water to replace it.

Step3 - Add Coconut Milk

  • Mix in coconut milk and stir well.
  • To prevent the coconut milk from becoming too sticky, slowly add it.
  • If you prefer less spice, add less chillies to the recipe and more galangalroot.
  • If you prefer it spicy, add more chillies or less galangal roots. The end result should be delicious.

Step4 - Serve

  • Top it with your favorite foods.
  • Enjoy!
