Are you a master of making curry paste?

Curry paste uses dried chillies, shallots, galangal root, lemongrass, kaffir lime leaf, garlic, shrimp paste, sugar, salt, and sometimes coconut milk. It is an important ingredient in Thai cuisine.

Curry paste is one of the most popular condiments in Southeast Asia. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.

It is very easy to make it at home. Follow our step-by–step guide below.

Step1 - Prepare Ingredients

  • Before you start this recipe, make sure that all ingredients are prepared.
  • Peel and chop shallots (about two cups). Next, chop galangal root into small pieces (3 inches in length) and place aside.
  • Next, slice four garlic cloves. Peel and finely mince lemongrass stems (about 1/2 inch thick).
  • After that, you will need to crush dried red chili peppers (about four tablespoons) before removing the seeds (optional).
  • Next, cut the kaffir-lime leaves into thin strips (5 inches). Take out the white part and place it in a bowl.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Finally, measure the sugar and salt.

Step2 - Grind Ingredients

  • Combine all ingredients and blend until smooth.
  • The texture should be similar to that of peanut butter.
  • You can replace some oil with water if you wish to reduce the oil content of your dish.

Step3 - Add Coconut Milk

  • Mix the coconut milk into the mixture.
  • You should slowly add the coconut milk so that it doesn't get too sticky.
  • For a milder taste, use less chillies and more galangal roots.
  • You can make it more spicy by adding more chilies and less galangal root. The final product should be tasty to you.

Step4 - Serve

  • Serve on top of your favourite foods.
  • Enjoy!
