What's the difference in cooking with whole vs. ground spices? Ground Spices?
There is no difference between cooking whole spices and with ground spices. All spices are ground after harvesting. So there is no difference in quality.
The price difference is however significant. Whole spices cost more because of the labour involved in processing them. But the taste is worth it.
If you purchase whole spices in bulk, you might get an additional discount. An example: If you buy an entire bag full of cinnamon sticks, you might get a discount.
The same goes for nutmeg, cloves, ginger, cardamom, etc. If you purchase these spices in bulk, you may be able to save money.
Ground spices last much longer than whole spices. Ground spices quickly lose their potency due to oxidation.
But the main reason why we recommend purchasing whole spices is that they add a lot of character to recipes.
You can make delicious curry using whole turmeric, instead of ground turmeric. You can also grind whole coriander leaves to make a spice mix for chicken dishes.

Do You Know How To Make Curry Paste?
Curry paste uses dried chillies, shallots, galangal root, lemongrass, kaffir lime leaf, garlic, shrimp paste, sugar, salt, and sometimes coconut milk. It is used extensively in Thai cuisine.
Curry paste is one of the most popular condiments in Southeast Asia. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.
It's not difficult to make at home! Follow our step-bystep guide below.
Step1 - Prepare Ingredients
- Before you start making this recipe, prepare all ingredients.
- To begin, you will need to peel and chop shallots (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
- Next, peel and slice garlic cloves (about four cloves). Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
- Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
- Next, cut kaffir lime leaves into thin strips (about 5 inches long). Remove the white part of the stem and set it aside.
- Then drain the shrimp paste (6 ounces) and then coarsely mash it.
- Finally, measure out sugar and salt.
Step2 - Grind Ingredients
- Blend all ingredients together until smooth.
- The texture should be comparable to peanut butter.
- If you would like to reduce the amount oil in your dish, you could substitute water for some of it.
Step3 - Add Coconut Milk
- Mix the coconut milk into the mixture.
- You should slowly add the coconut milk so that it doesn't get too sticky.
- You can reduce the amount of chillies and increase the quantity of galangal root if you prefer it less spicy.
- You can make it more spicy by adding more chilies and less galangal root. The end result should be delicious.
Step4 – Serve
- Top it with your favorite foods.
- Enjoy!
