1. Za’atar
Za’atar is a Middle Eastern spice blend made from thyme, oregano, marjoram, sumac and sesame seeds. This flavorful roasted mix can add a surprising amount of complexity to stews, and its earthy nutty aroma goes perfectly with chickpeas.
It’s also great for a quick and easy seasoning for meat, veggies, rice and potatoes. It’s particularly good paired with yogurt cheese, like labneh.
Za’atar is often used as a dry rub on chicken, vegetables and pasta, but it can also be sprinkled over hummus, or combined with olive oil to dunk bread for an easy snack. You can even roll goat cheese in it for an impressive appetizer.
2. Sumac
A Middle Eastern spice blend, sumac has a lemony tang that can enhance chickpea stews. It can be added to roasted vegetables, used as a meat rub, and is the perfect flavoring for hummus.
Sumac can be found in most grocery stores in ground form. Some specialty spice shops carry it as well.
You can also substitute sumac for a similar flavor in your recipes, such as a pinch of smoked paprika or ground coriander. Smoked paprika does not have the same lemony freshness as sumac, but it will add a nice red color to your recipe.

Add urfa biber to meats, vegetables, rice, and even to hummus for additional depth. It’s great sprinkled on roasted cauliflower and squash, too. And for desserts, it’s a fantastic complement to cakes or brownies, especially chocolate ones.
4. Baharat
Baharat is a traditional Middle Eastern spice blend used to add depth and flavor to sauces, soups, grains, vegetables, stews and meat. It can be used as a dry rub marinade or combined with lemon juice and olive oil for a wet marinade.
Depending on the region, baharat has different ingredients. Turkish baharat tends to be more minty than Arabic, while Tunisian baharat is a simple blend of cinnamon and black pepper.
You can buy a pre-made baharat mix, or make it yourself. Simply combine all the spices in a spice grinder and grind until fine. The mixture is easy to store and has a long shelf life.
5. Garlic
A savory and sweet flavor, garlic is a key ingredient to enhance the flavor of chickpea stews. It can be used on its own, or with other spices such as za’atar and baharat.
The smoky, spicy, and nutty flavors of garlic can complement and even highlight the other Middle Eastern spices in a dish. It can also be combined with fresh herbs for a bright and refreshing addition to your stews.
To start, sautee garlic and onion in a small amount of oil over medium-high heat until they have softened. Then, add the rest of the stew ingredients and cook until everything is tender and infused with flavor. This will allow the spices to open up and release their oils.

There isn't any difference between cooking with whole spices and ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.
But the price gap is significant. Whole spices are more expensive because of the labor required to process them. However, the flavor is worth it.
If you purchase whole spices in bulk, you might get an additional discount. If you buy a whole bag of cinnamon sticks, you may get a discount.
The same goes for nutmeg, cloves, ginger, cardamom, etc. If you purchase these spices in bulk, you may be able to save money.
Whole spices also last longer than ground spices. Because ground spices lose potency quickly from oxidation, this is why whole spices last longer than ground spices.

How to Make A Garlic Press
A garlic press is an essential tool for any home cook. It makes it easy to mince garlic into a paste, puree it into soups or salad dressings, or even make a sauce. You can also crush whole garlic cloves to make buttery spreads or garlic seasonings.
It's possible to be confused if you don’t yet own a garlicpress. Here are some tips that will help you get started.
First of all, you'll need to get a large bowl. Place the bowl underneath the press and pour the crushed garlic into it. Now, turn the pressure regulator to maximum.
Next, turn the handle clockwise until you hear a click. The top end of the press should lift and reveal a flat area that allows you to slide your blade back and forth across the bowl. Continue to turn the handle counterclockwise, until the blades are closed.
Finally, remove the pressed garlic.
Here are some ways to make this versatile tool even more useful:
