This Middle Eastern spice blend is made up of paprika, coriander seeds, cumin seeds, cloves, peppercorns, and nutmeg. You can also add saffron, mint and cinnamon to this mixture for additional flavour.
This mix can be used to season rice, vegetables, grains, meat and stews. It’s also a great rub for grilled meat, chicken and fish.
Ras el Hanout
Ras el Hanout is a flavourful spice blend that’s widely used in North Africa. It’s a mixture of spices, and no two blends are exactly the same.
It can be found in a variety of forms, and is typically comprised of cloves, coriander, cinnamon, cardamom, cumin, nutmeg, mace, peppercorns and turmeric. It may also contain cubebs (tailed pepper or Java pepper), dried rosebud, ash cherries and monks’ pepper to improve its flavour.
This robust Middle Eastern blend is excellent with lamb and works well with numerous other tangines too. It’s a great base for chicken kebabs, meatballs and even Moroccan flatbreads.
You can make a homemade Ras el Hanout in a mortar and pestle, but you can also buy a ready-made version at most grocery stores. The best part about a homemade blend is that it can be customized to your taste. You can add or decrease the quantity of each spice based on your preferences.
Za’atar
One of the most versatile Middle Eastern spice blends is Za’atar, which combines thyme, oregano, sumac and sesame seeds. This herbaceous mix gets a burst of tartness from lemony sumac and a toasty crunch and nuttiness from sesame seeds.
It goes a long way in hummus, labneh and other savory favorites. It also makes a great dry rub for meats and adds flavor to marinades.
When buying za’atar, be sure to find a blend that is vibrant in color (not clumpy), so you know it’s fresh and fragrant. You can also make za’atar at home.
This spice blend is one of my favorite ways to add a Middle Eastern flare to fish and white meat dishes. It adds a rich, nutty flavor to baked fish and can also be combined with labneh for an amazing appetizer. It’s also an excellent accompaniment to roasted and sauteed vegetables.
Sumac
Sumac is a spice that’s ground from the ripe, dried red berries of the sumac plant (Rhus coriaria). The flavor is tangy and lemon-like without the sourness of lemons, and it’s widely used in Middle Eastern cuisine.
When paired with a savory dish, sumac can add a subtle tanginess that cuts through the heavier spices and ingredients. It pairs well with a range of dishes including grilled meat, fish, and vegetables.
It also makes a tasty salad dressing and topping for hummus or pita bread. Adding sumac to a dish is easy: Simply place some of the berries in a mortar and use a pestle or an electric grinder to grind them until you have a coarse powder.
Other Middle Eastern spice blends that work great with sumac include za’atar and hawayej. These spice mixes are rich and aromatic, adding depth to a variety of dishes. They can be used in savoury dishes such as tagines, soups, rice and curries.
