The Origin of Birthday Cakes and Candles

The celebration of birthdays dates back to ancient civilisations. Ancient Egyptians believed, for example, that pharaohs achieved divine status after their coronation. This was considered their "birth" into godhood. To commemorate the coronations of pharaohs, celebrations were held, much like modern birthday parties. In honor of the sun god Ra, Egyptians served "Khak" cookies as part of their celebrations. The cookies were made from flour, butter and sugar with nutmeg and cinnamon. They symbolized another successful trip around the sun.

Cakes played an important role in ancient Greece and Rome's birthday celebrations. Cakes were a big part of Roman weddings and birthday celebrations. These round cakes, which were sweetened with honey and flour, were made from ingredients like nuts, yeast, honey, and flour. The Ancient Greeks also celebrated the sixth day with cakes in the shape of a moon, decorated with candles. These cakes were made in honor of Artemis, goddess of the Moon. This practice is the origin of the tradition of lighting candles to decorate cakes, which symbolizes the glow from the moon. Candles on cakes were thought to drive away evil spirits in ancient Pagan cultures such as Greece and Rome. The smoke from the candle was also believed to be a way to pray to the gods. During birthday celebrations, lighting candles and making noise were considered protective measures against evil spirits.

The Evolution and Commercialization of the Birthday Cake

Birthday cakes have evolved over the years. German bakeries began selling sweet cakes for birthday parties in the early 1400s. Kinderfest celebrations featured birthday cakes, called Geburtstagorten. These cakes were once a luxury for the rich, but they became more widely available with the Industrial Revolution.

In the 1700s German children received cakes with multiple layers, decorations and icing on their birthdays. They were also accompanied by candles. Cakes were decorated with confectioner's and granulated sugars for a delicious sweetness. The candles were used as decorative elements. They represented the child's year plus one and symbolized the hope of another healthy year. In Switzerland, the tradition of blowing out birthday candles dates back to 1881. As part of the celebration, each candle was blown out one at a time, representing a year.

In the past, birthday cakes were sweet, and this was achieved by adding sugar or honey to the batter. Confectioner’s sugar is used to make fondant and frosting for birthday cakes. The smooth texture helps to achieve the right consistency when frosting. As decorations, sprinkles, candy, and fruit are added to give these birthday favorites a sweet finish.

  1. Spice Cake: Spice Cake is known for its combination of cinnamon and cloves. Some variations also include cardamom or dried ginger to add heat. Spice cake is a favorite for its flavor. Due to its limited ingredients, the cake can become dense and heavy. For a sweeter contrast, you can add cream cheese icing. You can also include chopped nuts for extra texture and crunch.
  2. Pumpkin Cake: If you love the pumpkin spice trend, then pumpkin cake will be a hit amongst cake flavors. The canned pumpkin puree adds moisture to baked goods such as cakes, cupcakes and other baked goods. Pumpkin cake is not overpowering in flavor, so it's a great choice for those who aren't fans of the pumpkin-everything fall trend. You can enhance the flavor of your pumpkin cakes by adding additional spices or increasing the amount of canned pumpkin. You can also use pumpkin to enhance your spice cake. This versatile ingredient can add moisture and depth to baked goods.

The Best Devil's Food Cake Recipe

No, Really! This is the best recipe for Devil's Food Cake I've made in my own kitchen. Once you taste it, I am sure you'll agree.

Preparation Time: Twenty minutes

Cook Time 33 Minutes

Total time: 52 minutes

Yield: 12 slices
You will need two 8-inch round baking pans as well as a mixing bowl, a medium saucepan and a cake spatula. This cake is easier to make if you use an electric mixer. It will also save your wrists by not having to mix it manually.

Ingredients:

  • 1 cup of unsalted butter
  • 1 cup whole milk
  • 1 cup of water
  • Dutched cocoa powder, 3/4 cup Royal Mahogany Cocoa Powder
  • 1 tsp. Instant coffee is optional. See note
  • 2 cups all-purpose flour
  • 1 cup granulated Espresso sugar
  • 1 cup of light brown sugar tightly packed
  • 1 1/2 tsp. baking soda
  • 1 tsp. Baking powder
  • 1 tsp. Himalayan pink salt
  • 3/4 cup sour cream
  • 2 large eggs, room temperature preferred
  • 2 tsp. Madagascar Bourbon Vanilla Paste, see note
  • Make 1 batch of chocolate frosting (see recipe below) or any frosting you like

Instructions:

  1. Pre-heat oven to 350F (175C). Line two 8" baking trays (see note about different sizes pans) using parchment paper and spray baking spray on the sides. Set aside.
  2. Combine butter, water, milk, cocoa, and instant coffee in a medium saucepan.
  3. Place on the stovetop and heat to medium low. Stir frequently until the butter melts. Bring to a rolling boil while stirring continuously. Increase the heat to medium. Allow to cool 15 minutes, while you prepare your dry ingredients.
  4. In another large bowl, whisk flour, sugar and baking soda.
  5. Pour the flour mixture, whisk briefly again to combine. Stir until smooth.
  6. Stir in the sourcream until well combined.
  7. Stir in the vanilla and eggs until the batter is smooth.
  8. Divide batter evenly into baking pans. Bake at 350F (175C), for 30-35 mins, or until a toothpick is inserted and comes out with fudgy or clean crumbs.
  9. Let cool for 15 minutes in the baking pans, then use a knife to remove it. Invert the pan carefully onto a cooling rack and allow to cool completely.
  10. Before frosting, cool completely.

The Best Chocolate Icing:

Preparation Time: 20 Minutes

Total time: Twenty minutes

Yields : Enough to make one cake or twelve cupcakes

Recommended equipment: To make this recipe, you will need a stand or electric mixer, mixing bowls and a spatula.

Ingredients:

  • 6 oz. Semisweet chocolate2 - roughly equal sized pieces.
  • 1 cup of unsalted butter softened at room temperature
  • 2 cups of powdered sugar
  • 1/2 tsp. Madagascar Bourbon Vanilla Paste, see note
  • 1/4 tsp. Himalayan pink salt
  • 2 Tbsps. heavy cream

Instructions:

  1. Microwave your chocolate for 30 seconds in a bowl that is microwave safe. Stir well. Stir again. Return the chocolate to the microwave and heat it for 15 more seconds. Continue heating the choclate for 15 seconds and stirring between each one until it is smooth. Follow these steps exactly or you could burn your chocolate.
  2. Allow chocolate to cool at least 10 minutes while stirring it occasionally. If the chocolate is too hot, it can melt the butter and sugar and ruin the frosting.
  3. While the chocolate cools, use an electric or stand mixer to whip up butter in a separate dish.
  4. Add the melted chocolate to the cooled whipped cream and mix well.
  5. Add sugar gradually, scraping the sides and bottom occasionally to ensure that all ingredients are combined.
  6. Add vanilla paste and salt to the mixture.
  7. Add heavy cream gradually to the frosting while mixing on low speed. Increase speed gradually to high, and beat for 30 second.
  8. Spread or pipe frosting on the cake after it has cooled.

Baker's Notes:

Use Coffee: To add an extra flavor boost, you can replace water and instant coffee with 1 cup your favorite brewed espresso coffee. The coffee enhances the richness and flavor of the chocolate to create a decadent cake. This substitution is highly recommended as it enhances the overall flavor. If you don't want to use instant coffee, or if you do not have any, water will work just as well. Whether you choose to use coffee or water, your cake will still be delicious.

Vanilla Paste is a great alternative to vanilla extract. You can use vanilla extract if you prefer, but we recommend using vanilla paste. Spice Station Silverlake sells vanilla paste. This vanilla paste is made by blending vanilla beans with sugar, bourbon and gum arabica. It's perfect for sweet dishes like our Devil's Food Cake.

Baking Pans/Making Cupcakes This recipe is flexible in terms of the baking options. You can bake the batter using two 9" pans with a recommended cooking time of 28-30 min. You can also make 24 cupcakes with a 17-18 minute baking time. The suggested baking time for a 9x13" pan is 30 minutes. It is recommended that you always perform the toothpick check to ensure that the cakes have been fully baked. If the toothpick comes out with moist, fluffy crumbs or clean (not wet batter) then the cake has been baked. This recipe was not tested specifically in a Bundt Pan, but it could be used. However, the bake time will vary.

You can make the cake up to 2 days in advance of frosting and serving. Wrap the cake tightly in plastic wrap after baking and cooling. Store it at room temperatures. You can freeze the cake up to one month if you want to bake it in advance. The cake should be thawed before frosting. The cake can be kept at room temperature for up to 48 hrs. once it has been frosted. You can also store the cake in the fridge for up to five days.
