The best Greek Spiced Roasted Cauliflower Recipe

This recipe is full of flavor, low in carbs and goes well with any main meat dish.

Greek Spiced Roasted Cauliflower

INGREDIENTS

  • Cut 1 large head of fresh cauliflower into bite-sized pieces
  • 2 tbsp olive oil
  • Half a teaspoon of garlic powder
  • Half a teaspoon of salt
  • 1/4 tsp Black Pepper

SAUCE

  • 1/4 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • Lemon juice, 1 tbsp
  • MySpicer Greek seasoning, 1 to 2 tablespoons
  • 1/3 cup feta cheese, crumbled
  • Fresh mint leaves, 1/4 cup

INSTRUCTIONS

Pre-heat oven to 425 degrees.

In a large bowl, combine the cauliflower pieces with the olive oil, black pepper, garlic powder and salt. Place the seasoned pieces on a baking sheet that has been preheated. Bake for 30 minutes, until the cauliflower is soft and begins to char at the edges.

After 5 minutes, remove the cauliflower bites and let them cool.

Mix the Greek yogurt with mayonnaise, MySpicer Greek seasoning, and lemon juice in a separate bowl. Add the cauliflower to the mixture and continue mixing until it is fully coated.

Sprinkle the crumbled feta cheese and mint on top.
