Do You Know How To Make Curry Paste?
Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It is widely used in Thai cuisine.

Step1 - Prepare Ingredients
- Before starting the recipe, you will need to prepare all ingredients.
- Begin by peeling and cutting shallots into small pieces (about 2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
- Next, peel and slice garlic cloves (about four cloves). Peel and finely mince lemongrass stems (about 1/2 inch thick).
- Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
- Next, cut the kaffir-lime leaves into thin strips (5 inches). The white part of your stem should be removed and put aside.
- Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
- Final, weigh out salt and sugar.
Step2 - Grind Ingredients
- Grind all ingredients together until smooth.
- The texture should be comparable to peanut butter.
- Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture, and mix well.
- Add coconut milk slowly so that the paste does not become too sticky.
- For a milder taste, use less chillies and more galangal roots.
- If you prefer it spicy, add more chillies or less galangal roots. The final result should taste delicious to you.
Step4 – Serve
- Top it with your favorite foods.
- Enjoy!
