It is used often in soups and curries; galangal lends a slightly peppery taste to dishes; chillies add a spicy kick; garlic gives dishes an umami depth; shrimp paste adds a subtle, but fragrant, aroma to dishes; coriander brings out a mild, yet pleasant aroma to dishes; cumin adds a smoky flavor to dishes; and turmeric gives food a vivid yellow color.

Together, these spices combine to create complex flavour profiles unique to Thai cuisine. Mixing spices together can make dishes both tasty and aromatic. These spices will help you bring Thailand's flavours to your kitchen.


Can garlic be used in Thai cooking

Thai cuisine often uses garlic. Garlic is commonly added to salads.

Thai garlic is chopped and fried together with ginger, shallots and other spices. It is also often eaten with sticky rice.

The most common way to eat garlic is to chop it finely and mix it with chilli paste, salt, fish sauce, lime juice, and oil. This is known as "Nam Phrik", or namphrik. Nam phrik is often served with grilled chicken or beef.


What's the difference of curry and curried

It doesn't matter how the spelling is written. Both words are used to describe the same thing: Indian dishes that combine meat or vegetables with various seasonings.

Curry derives its name from the Hindi word kari which means "to rub." The spice mixture is then applied to the food. Curried foods are typically cooked until browned.

Although curried dishes used to be reserved for special occasions, today they are enjoyed all over India. You can choose from chicken, beef, lamb or fish as well as vegetables and rice.

Plain white rice is often served with curried dishes. You can also add raita (a yogurt sauce), or chutney (a sweet relish).


How to store your spices?

Keep them in an airtight, dry container away from heat or light.

Place them in a dark cupboard to store spices for extended periods. This will help preserve the spices and prevent oxidation.

Keep your spices out of direct sunlight and in a cool dry place. A heater or window can cause the spice to lose its aroma and flavour.

Spices work best in an airtight jar or tin. Avoid storing spices in plastic containers.

Always check the seal after opening and resealing, as humidity can cause spoilage.

You don't have to throw out leftover spices. Use them instead by adding them into other dishes. To extend their shelf life, you can freeze them.


What's the Difference Between Cooking With Whole vs. Ground Spices?

There is no difference between cooking whole spices and with ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.

However, this price differential is quite significant. Whole spices are more expensive because of the labor required to process them. But the flavour is worth it.

You'll often find extra discounts for bulk purchases when you buy whole spices. An example: If you buy an entire bag full of cinnamon sticks, you might get a discount.

This is true for cloves, ginger and cardamom. These spices can be purchased in bulk to save money.

Whole spices also last longer than ground spices. Ground spices quickly lose their potency due to oxidation.

The main reason we recommend whole spices over dried is that they can add lots of flavor to recipes.

Whole turmeric can be used to make delicious curry. You can also grind whole coriander leaves to make a spice mix for chicken dishes.

Also, grinding spices takes time. A large amount of whole spices is a good idea. That way, you won't run out of spices too fast.

Do You Know How to Make Curry Paste?

Curry paste contains dried chillies and shallots, galangal roots, lemongrass (kaffir lime leaf), garlic, shrimp paste, sugar and salt. It is an important ingredient in Thai cuisine.

One of the most widely used condiments in Southeast Asia is curry paste. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.

It's easy to make at-home! Just follow our step-by-step guide below:

Step1 - Prepare Ingredients

  • Before you start this recipe, make sure that all ingredients are prepared.
  • First, peel and chop shallots (2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
  • Next, cut four garlic cloves into pieces. Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
  • Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
  • Next, cut the kaffir-lime leaves into thin strips (5 inches). Next, remove the white part from the stem and leave it alone.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Measure out the sugar and salt.

Step2 - Grind Ingredients

  • Combine all ingredients and blend until smooth.
  • The texture should be very similar to peanut butter.
  • If you would like to reduce the amount oil in your dish, you could substitute water for some of it.

Step3 - Add Coconut Milk

  • Add coconut milk to the mixture and mix well.
  • Add coconut milk slowly so that the paste does not become too sticky.
  • If you like it milder, reduce the number of chillies used and add more galangal root.
  • You can make it more spicy by adding more chilies and less galangal root. The final result should taste good to you.

Step4 - Serve

  • Serve on top of your favourite foods.
  • Enjoy!
