Asian cuisines have a wide range of popular spice blends that are used to enhance the flavor of dishes. Depending on the region, these spices can help to balance out aromatic, hot, savory, sour and sweet flavors.
For example, Chinese five spice is a popular spice blend that can be used in pork dishes like this Pork Tenderloin with an Asian Twist. Other popular Asian spice blends include ras el hanout, baharat, and curry powder.
Chinese Five Spice
Chinese five-spice powder is an Asian spice blend that unites the flavors of sweet, sour, salty, bitter and umami/pungent. It’s made from cinnamon, star anise, fennel, szechuan peppercorn and cloves and can be used to flavor many different dishes.
It can be added to stew meats or poultry, incorporated into marinades and used as a spice rub for roasted foods. You can also use it to season breading for fried foods.
This versatile seasoning mix is a must-have in your spice cabinet! It adds a rich flavor and complexity to savory dishes like stir-fries, as well as a sweet note for desserts.
The combination of cinnamon, star anise, fennel and Sichuan peppercorns makes it the perfect flavor for pork dishes. It can be used to add flavor to pork steaks, ribs, duck and a variety of other fatty cuts.
Cinnamon
Cinnamon can be found in many Asian spice blends and is used to add a warming and delicious flavor. It is one of the world's most popular spices and has been used in cooking for thousands of years.
Besides adding a distinctive flavor to recipes, cinnamon is rich in antioxidants and can help prevent diabetes, cancer and other diseases. It also helps to improve blood sugar levels and digestion.
There are two common types of cinnamon: Ceylon and cassia, but each type has different flavor profiles. Cassia is easier to find in grocery stores, and it can be substituted for Ceylon if needed.
It’s a good idea to toast the spices before grinding them to make them more aromatic and to enhance their flavors. You can do this by placing the spices on a baking sheet and roasting them in a preheated oven for about 10 minutes or until they’re fragrant.
A common Chinese and Taiwanese blend, five-spice powder combines five assertive elements--cinnamon, cloves, fennel seed, star anise and Szechuan peppercorns--to balance basic tastes of sweet, sour, salty, bitter and pungent. It’s a versatile and easy-to-find ingredient that can be added to your favorite Asian dishes.
Ginger
Ginger is a zesty, fresh flavor that adds zing to a variety of dishes. It's a staple in many Asian recipes, but can also be used as an accent in a wide range of Western meals and desserts.
It can be grated or added to marinades, grilling sauces, salad dressings and stir-fried foods. It can also be juiced to substitute for ground ginger in many recipes.
A popular form of ginger is crystallized ginger. This form of ginger has been chopped into small bits and cooked in a corn syrup, which creates a red-colored, sugar-coated form of the herb.
The tender strips of pork are glazed in a sweet, sticky, garlicky and gingery sauce that is as simple to make as it is delicious. This can be served over rice, noodles or finger food and is perfect for a quick dinner.
Lemongrass
Lemongrass is a versatile herb that can be used in soups, stews, curries, and roasted meats. It also can be dried and brewed into a tea.
Fresh lemongrass can be purchased in the produce section at grocery stores or Asian markets. It usually comes in groupings of three or four stalks, secured with an elastic band.
When purchasing lemongrass, check the lower part of the stalk, which should be pale yellow (almost white) in color and be firm. Avoid buying lemongrass with outer leaves that are crusty or brown.
To use, simply slice off the bulb end of the lemongrass and remove any hard outer skin. Then, process it in a food processor or chopper until it resembles small yellow-green flakes. Or, pound it with a pestle and mortar until fine and tender.
