For now, love yourself and enjoy this one ...
Indian Masala Chai spices were traditionally used in medicine. They are in keeping with the Hindu philosophy of balance, which uses diet, herbs and yogic breath. Chefs discovered that the same spices enhanced sweet and savory foods.
Indian-style cooking is known for its multi-layered approach to spice. It begins with toasting the whole spices, and ends with adding crushed or powdered versions right before serving.
It is therefore no surprise that spices are a key part of the story of Masala Chai. Even though we often refer to it as chai, that is incorrect. In India, chai denotes tea. Masala chai is spiced tea as opposed to chai, which means tea. )
The Chai Wallahs, or tea vendors, are everywhere in India. They carry a large load of hot chai and clay cups to sell. Clay cups are cheap, can be used only once and then thrown on the ground where they decompose into powdery clay. Biodegradability is at its best!
What goes into making a classic masala chai?
No matter what the recipe is, Masala Chai has three main components: spices, tea, and dairy. The tea and spices give you energy while the dairy gives it a creamy texture. This tea is not only warming to the body, but also lifts spirits. Masala Chai, India's national drink, is no surprise.
Many fans of India's spicy tea experiment with the three basic ingredients. First, tea. Masala Chai is most commonly made with Indian black teas, or breakfast blends. South African Honeybush and Rooibos as well as South American mates are perfect for chai spice. Sri Lankan black Ceylon and Assam teas make excellent chais.
The green teas that are popular in Kashmir are usually gunpowder types, rather than the delicate Japanese or Chinese vegetal varieties. Green teas made from Darjeeling or Ceylon teas can also be used to create a different kind of chai. They are less soft or smooth and more likely to have a dairy component, but they still add zing with the spices. White teas, pu-erhs and other rich teas are all good options for chai.
Create Your own Masala Garam
In Hindi, the term masala garam refers to a mixture of spices. There are many masala chai recipes, as varied as the chefs who prepare them. Creativity is the key here.
Cloves, ginger, cardamom, black peppercorns and cinnamon are the most common spices used in masala tea. Grind whole spices and grated fresh ginger (peeled or unpeeled). Start with a pinch each of the spices. Remember that cardamom, the mildest spice in the mix, can be overpowered by the other spices' sharp tang. If you like cinnamon, add more. Especially those from Sri Lanka and Vietnam. Allspice is, as the name suggests, a spice which mixes cinnamon, cloves and pepper, with a fourth spice called nutmeg. This spice makes it easy to achieve a balance between these flavors. Mace and nutmeg are two different parts of the same spice. Mace is the fibrous webbing around the fruit or pit of nutmeg. If Sri Lankan is available, choose it.
Indian spices may include ajwain (a bitter digestive), fennel seed (a lighter digestive known in Hindi as sonf or Soanph), and roasted poppy seeds called khaskhas. Spice Station Silver Lake is a great place to shop for these spices that are harder to locate in regular grocery stores.
Turmeric, coriander and bay leaves are some of the most common spices used to make masala chai. Other ingredients include saffron or saffron root, star anise (licorice), tamarind seeds, tamarind pods, saffron seed, saffron leaf, saffron seeds, saffron roots, saffron leaves, and vanilla bean pods.
We suggest that you start with allspice to make homemade masala garam. Then decide if you want more or less of each of the four flavors. You can adjust the amount of spices according to your taste. Try experimenting with Western flavors such as chocolate, vanilla or tamarind to add a bit more tang or creaminess.
If you are like me and want to make a cup of masala tea without making any changes, but don't have time to mix it yourself, you can buy the Masala Garam pre-mixed here span size="font-weight 400 ;">.
Dairy Sources: Cows and Nuts
Masala chai can be made with any milk type, including oxen, cow, or goat milk. However, avoid goat milk because it has an unpleasant tang. You can use canned condensed or evaporated milk to get a creamier texture.
Cashew, coconut, oat or rice milks are good non-dairy options. They have a creamier texture and taste compared to the lighter almond, hemp, soy or rice milks. If you prefer to enjoy your masala tea with the spices and the tea, then skipping the milk will not affect its taste. It's ultimately important to listen to your own taste.
Traditional Sweeteners
Jaggery is the sweetener of choice in Indian cooking. It is a cane sugar unrefined that comes in lumps and is easily crumbled into powder. Jaggery's robust flavor helps balance the tea spices. Other alternatives to sugar include raw brown or demerara, molasses or Karo corn syrups. Cane or beets sugars or rock sugars can also provide a delicate sweetness.
It's best to avoid artificial sweeteners if you can't use sugar. They may affect the flavor of your tea. For an authentic masala-chai, real sugar is the best option. Sugars and honeys are low in calories, with only 18-30 per teaspoon. They're suitable for almost all diets.
Make your own Basic Masala Tea
Add freshly grated ginger to your chosen combination of spices and grind in a grinder or mortar. You can also use whole allspice, and grind it to powder. Select your favorite tea and mug.
Make sure you have the right equipment and ingredients at hand, such as measuring spoons, measuring cups, small saucepans, tea filters or food strainers, and a tablespoon for stirring.
Masala Chai Recipe:
Ingredients:
- 6 Ounces of Water
- Use 1 teabag, or use a generous teaspoon of loose-leaf tea
- Masla Garam or Allspice
- 2 Ounces of Milk or Dairy Alternative
- 1 teaspoon of sweetener
Yieldspan size="font-weight 400 ;">: A perfect mug masala chai.
You can add more milk, Masala Garam, or allspice to your taste.
Instructions:

Heat your favorite mug in hot water while brewing. Then, discard the water and pour your tea into your mug. Make sure you throw out the tea leaves and spice. Stir in your milk of choice and sweetener.

How To
How to store cooking spice?
I will tell you how to store cooking spices for optimal performance. First, it is important to understand the science behind how foodstuffs are stored.
Because spices lose their flavour when exposed to the sun, they are best kept out of reach from light. This is because oxygen reacts with organic compounds like those in spices to cause oxidation.
Spices should be kept in the dark cupboards and sealed tightly in airtight containers to prevent oxidation. If these conditions are not met, spices will quickly lose their flavour.
The best way to preserve the flavour of spices is to keep them in airtight jars away from direct sunlight.
To make flavoured drinks, you can add herbs or spices to water. Mix 2 teaspoons ground cinnamon with 1/2 cup of warm liquid and stir. Add a squeezed lemon juice and serve immediately.
Add dried herbs and spices to soups. Spread the spice mixture evenly onto the dish. Allow it to sit for between 5-10 minutes before serving.
Remaining cooked vegetables, fruit and meats can be used in your favorite recipes to make snacks.
For the best flavor of fresh herbs, you can chop them up or tear them apart and then add them to your favorite foods. You can also freeze herbs and spices by placing them in ice cube trays or muffin cups and freezing them. Once frozen, place them in freezer bags or zip-top bags.
