Kan kan kan

North African cuisine is an eclectic mix of flavors rooted in Morocco, Alergia and Tunisia. The spices of these cuisines vary widely from country to country, but a few essential ingredients are common across the region and serve as the foundation for everything from couscous to Tagines.

One of these essential blends is suya, a dry spice mix popular in Nigeria and West Africa more broadly. It’s a nutty, fragrant blend of chile powder, ground ginger and peanut powder. It’s typically used to season skewered meat, like beef or chicken, but it can be used in marinades and sauces as well. Here, it’s incorporated into a quick relish of fresh scallions and ginger to liven up roasted vegetables.

Kyinkyinga Spice

Kyinkyinga Spice is a popular African spice blend. This dry peanut-based seasoning is most commonly used as a dry spice rub for grilled meats such as suya (also known as tsinga, tankora or kyinkyinga in West Africa). It is also popular as a condiment on various roasted vegetables.
