- Extra virgin olive oil 2 tablespoons
- 2 cloves of garlic, chopped
- Half a cup of canned tomatoes
- Half a yellow onion, diced
- 1/2 carrot, diced
- 1 tbsp basil pesto
- 2 cups vegetable stock
- 1 cup fresh spinach leaves
- Salt and black pepper
- Fresh thyme leaves, 1 tbsp
- 6 oz. Tortellini of choice

Boil
Tortellini should be cooked in salted boiling water, according to package instructions. Drain and set aside.
Cook
In a large pot, heat the olive oil on MEDIUM. Add the carrots, onions and thyme. Salt and pepper the vegetables and cook them for 5 minutes until they begin to soften.
Simmer
Add the canned tomatoes and vegetable broth, along with the garlic minced, to the pot. Simmer for 30 minutes until all the vegetables are soft and the liquid has reduced.

- Add some fresh herbs and lemon juice to the soup for a refreshing touch.
- If you're looking to try out other vegetables, I suggest trying mushrooms, celery diced, fennel or bell peppers.
- To reduce the fat and calories, I substituted broth for cream. If you want a thicker, creamier soup, add some heavy cream.

- This soup is great with a lentils salad. It's a nice contrast with the pasta.
- Antipastos (marinated meats, cheeses, artichokes, and cured meats) are a delicious way to introduce this main dish.

You can, provided you only use tortellini that have a vegetarian filling. Your broth should also be made of vegetables.
