Huevos Rancheros are not only delicious, but also super healthy. This dish is a mini-antioxidant fiesta, packed with eggs and tomatoes, onions and other fresh ingredients. Pinto beans will help you get your daily doses of vitamins and minerals. The feta cheese is a healthy option that is high in vitamins, antioxidants and calcium. It is also low in fat. This is a healthy way to begin your day.

- 1 ripe tomato, chopped
- 1 small onion, sliced
- 1 lime juiced
- 1 tsp cumin ground
- A pinch of freshly ground pepper and sea salt
- Extra virgin olive oil, 1 tbsp
- Pinto Beans, 1/2 Can
- 2 large eggs
- 2 tortillas, warmed
- 1/4 cup feta cheese, crumbled
- Fresh cilantro sprig
Instrucciones
Combination
For the pico de Gallo, mix the finely chopped onions, diced tomatoes and fresh cilantro in a small dish. Add the lime juice, too.
Cook
Heat the cumin and olive oil in a small pan on MEDIUM HIGH until the aroma is released. (About 30 seconds). Pour the pinto beans drained with a splash water into a small saucepan. After 5 minutes, mash with a fork. Add salt and pepper. Set aside.
Warm
Warm the tortillas in a small pan over MEDIUM-HIGH heat. Remove the tortillas. Set aside.
Fry
In the same pan, heat some olive oil. Fry the eggs in the hot oil until the yolk has half-cooked and the white is completely set.
Assemble
Place the tortillas warmed on a serving plate. On top, place one tablespoon of mashed pinto bean. Add the fried eggs and pico de Gallo. Garnish the dish with the crumbled cheese and fresh cilantro.

How to store cooking spices in a way that maximizes their performance. First of all, we need to establish an understanding of the science behind the storage of foodstuffs.
Spices are stored in airtight containers away from the light because exposure to light diminishes their flavour. This is due to oxidation which occurs when oxygen combines with organic compounds such as those found in spices.
To avoid oxidation, spices must be kept in dark cupboards. Spice tends to lose its flavour quickly if these conditions aren't met.
