The brisket spice rub is covered in another recipe. You can make this rub in a short time, but it is best to do so before tackling the recipe.

  • 2 lb Beef Brisket
  • 1/4 cup brisket Rub
  • 2 tbsp olive oil
  • Two cups of beef stock
  • Red wine, 1 cup
  • 2 tbsp Worcestershire sauce
  • 1 onion roughly chopped
  • 2 Bay Leaves
  • 1/4 teaspoon salt

Bring the brisket up to room temperature. Sprinkle the rub on the meat and gently pat it to impart flavor.

  • Add rosemary or thyme into the brine.
