Sausage Gravy Pizza
The classic sausage gravy has become the ne plus super of breakfast foods. It's everything. This easy breakfast pizza is so much better without tomato sauce or even pizza sauce.
It's a comforting, savoury and meaty dish that will make you smile. It's so easy to prepare, but sometimes I make too much for one breakfast.
The idea for this sausage gravy breakfast pizza came from the desire to use leftover sausage gravy. However, it is now a regular in our home due to its deliciousness. This home is not one that can resist the sausage gravy breakfast pie.
Breakfast Pizza
Let's look at the ingredients of this ultimate breakfast pie. This recipe is pretty flexible, and allows for some substitutions.
- Eggs
- Milk or Cream
- Cheese
- Butter
- Naan, pre-made pizza crusts or pita bread
- Sausage Gravy
- Chives (or green onions)
- Black Pepper and Salt
Make scrambled cheese eggs super quickly and add them as the first layer to your breakfast pizza. The eggs might appear underdone if you don't follow the instructions exactly.
But remember that the cooking will continue while the pizza bakes. Go easy on the first cook!
You can use any type of cheese with eggs. I incline toward cheddar cheese, Monterey Jack cheese, or mozzarella cheese for this pizza.
Breakfast Pizza with Sausage Gravy
Your breakfast pizza can be made with either pre-baked naan, pita, or pizza crust. You can either buy a prebaked pizza crust, or you can make your own using the instructions provided in the recipe notes.
Pre-made naan or pita are both great alternatives to pizza crusts. Each has their own charm. The softer crust of a pita or naan bread is better than that of a pizza shell.
You can choose your crust based on your time availability and personal preferences. I keep frozen pizza shells in my freezer and enjoy the extra chew and body they provide.
As I mentioned, I use leftover gravy from sausages for this pizza. You can make your own sausage gravy, or buy some from your favourite restaurant.
Some people get upset if you add anything green to their sausage gravy, but I insist that it be done. It's hard to beat the subtle onion flavor that green onions or chives add to the finished breakfast pie.
Whatever anyone says, if it comes to sausage gravy I will always be on Team Parsley Garnish. If you want, I'll go toe-to -toe politely with your blessed grandmother over it.

Breakfast Sausage Gravy Pizza
The equipment list is short and sweet for our sausage gravy breakfast pie. It's likely that you already have everything needed to make these breakfast pizzas.

My secret weapon for making the fluffiest eggs is silicone spatulas or spoonulas. They clean the bottom and sides of the pan thoroughly and gently, without scratching even non-stick surfaces.
When it comes to choosing equipment, you need to decide whether you prefer a crispier crust or softer one. The pan will deliver the desired texture of your crust, regardless of the pizza crust you choose.
You can make your pizza crispier by baking it on a pizza pan with perforations. If you bake it on a parchment-lined sheet pan, the pizza will be softer and more yielding.
You can cheat to get a crispy crust if you don't own a perforated pizza pan. You're already starting with structure and body if you use a prebaked crust for your pizza, pita, or naan.
It's easy to do: Build your pizza on the backside a sheet pan, then gently slide it onto the rack in your oven. Then, using tongs, pull the pizza back on your sheet pan after it has been baked. Voila!
If you're worried about this, place a pan on the rack below the one where the pizza is cooking to catch any overflow. Place a pan below the rack on which the pizza is being cooked to catch any spillage.

In a liquid measuring glass or mixing bowl, whisk together the cream, eggs, salt and pepper until they are all of a similar colour. This can be set aside while butter is heated in a large non-stick skillet on medium low heat.
Pour the egg mix into the butter that has melted and leave it to cook for one minute. Use a silicone spatula to gently stir the egg mixture in a circular motion, scraping both the bottom and the sides of the pan. Cook the eggs for only 3 minutes or until they are a curdy, fluffy texture.
The eggs must be moist, but not runny. The eggs should not be overcooked to the point where they are dry.
Remove the pan from heat and sprinkle 1 cup of cheese over the eggs. Stir gently to combine. Spread the eggs on the pizza crust, pita bread or naan. Leave a 1-inch border around the edges.
Sprinkle the remaining cheese on the exposed egg and dollop 1 1/2 cups sausage gravy over it. Slide the pizza in the oven on a parchment-lined sheet pan, a perforated pizza pan or directly onto a rack. Bake until the cheese has melted completely and the sausage gravy bubbles.
You can broil the pizza for a few minutes if you want the cheese and sausage gravy to be a bit more golden. Be careful to avoid burning.
Remove the pizza immediately from the oven, and garnish with chopped green onions or chives. Allow it to stand for 3 - 5 minutes on a cutting board or baking sheet before serving.
Note: If using leftover sausage gravy on your pizza, warm it up gently first.
