Ramen Noodle Salad was something I ate a lot when I was a child and I love it today just as much. Why? It's because it is light, fresh and filling. It uses simple inexpensive components and can be stored in the refrigerator for several days. This recipe will help you get through the long, hot summer days!

What is Ramen Noodle Salad?

This Ramen Noodle Salad is a simple mix of finely shred cabbage, chickens, carrots and green onions, with a few almonds for crunch. This salad is also topped with a light dressing that features Asian flavors like rice vinegar, soy sauce, ginger and rice vinegar. Many people call it Chinese Chicken Salad but this is not an authentic Chinese recipe. We've rebranded it as Ramen Noodle Salad.

Use the Right Cabbage

The salad can be made with any type of cabbage. Napa is a good choice because it has a lighter texture and softer taste than green cabbage. When I went to the grocery store, Napa cabbage was on the pricey side. I substituted it with some green cabbage. I also added a bit of purple cabbage for colour. If you prefer, you can shred your own cabbage or use pre-shredded coleslaw (cabbage with carrots). Freshly shredded is always better. ;)

What else can I add?

Salads are great because they allow you to add so many things. This Ramen Noodle Salad does not disappoint! If you happen to have any of these ingredients on hand, you can also add them to the ramen salad:

  • Mandarin oranges
  • Sesame seeds
  • Cashews
  • Avocado
  • Cucumber
  • Edamame
  • Peanuts
  • Broccoli stems shred

How to store leftovers

You have two options if you want to prepare this ramen salad ahead of time (highly recommended). To keep the noodles crunchy, do not stir them in the salad prior to storing. Sprinkle them on each serving right before eating. You can do what you want! As the salad is chilled, the almonds will soften a little. The salad can be kept in the refrigerator for 3-4 days.

  • 1/4 cup neutral salad oil* $0.16
  • 1/4 cup rice vinegar $0.60
  • 2 Tbsp honey $0.50
  • 2 tsp soy sauce $0.04
  • 1 tsp ground ginger $0.10
  • 1/4 tsp garlic powder $0.02
  • 1 tsp toasted sesame oil $0.10

Salad

  • 6 cups shredded cabbage $1.10
  • 1 carrot $0.14
  • 4 green onions $0.45
  • 1 3oz. package instant ramen $0.39
  • 1/4 cup sliced almonds $0.73
  • 2 cups shredded rotisserie chicken $4.00

Instructions

  • First, make the dressing. Mix the rice vinegar, honey and soy sauce with the salad oil. Set aside the dressing.
  • The cabbage should be shredded as finely and as quickly as possible. The green onions and carrots should be sliced. The instant ramen noodles can be crushed (recycle the seasoning packets or discard them).
  • In a large bowl, combine the shredded chicken, shredded cabbage, carrots, green onions, almonds and crushed ramen noodles. Pour the dressing prepared over top. Toss salad until all ingredients are evenly coated with dressing. Serve immediately or chill until ready to serve.

Ramen Noodles Salad: Step-by-Step Photos

First, make the dressing. Mix 1/4 cup salad oil with 1/4 cup vinegar, 2 Tbsp of honey, 2 tsp of soy sauce, 1/2 tsp ginger powder, 1/4 tsp of garlic powder and 1 tsp sesame seed oil. Set aside the dressing.

For the salad, shred approximately six cups of cabbage. Use green cabbage, Napa, purple or any combination of these. The cabbage should be shredded as finely and as quickly as possible.

Slice four green onions and one carrot.

About two cups of cooked breast chicken can be shredded. You can use a rotisserie or canned chicken breast.

In a large bowl, combine the chicken, carrots, green onions, and shredded cabbage. One 3 oz. The seasoning packet can be saved or thrown away. Add 1/4 cup almonds and crushed ramen to the bowl. Pour the dressing on top.

Mix the salad until it is well coated with dressing and evenly distributed.

The ramen noodles salad can be served immediately or stored in the refrigerator for up to 4 days. Just before serving, give the salad a good shake to distribute the dressing.
