Simple skillet meals can be a real lifesaver on busy weeknights. If that skillet includes bacon and potatoes, then I'm in! You can serve this simple green bean and potato skillet as a side dish or, like me, just eat it all by itself. I'm satisfied with the caramelized onions and smoky potatoes. Below are some suggestions for adding and customizing the recipe to make it yours.
Use of Potatoes
I use baby potatoes because they are cute. No, just kidding. Well, sort of. This recipe works well with baby potatoes because they cook fast, require little chopping and have a good skin-to-flesh ratio, which gives them a nice color and texture. If you can't afford baby potatoes, use red potatoes or Yukon Gold and cut them into 1-inch chunks before boiling.
Frozen green beans for the win
By now, you probably know how much I enjoy the convenience and waste reduction that frozen vegetables can provide. This is why I used frozen beans for this quick skillet dinner. However, you can use fresh beans if available or in season. Just cook them longer (until crisp-tender) in the pan. The frozen green beans have already been partially cooked. This makes this skillet much easier and faster.

This skillet of green beans and potatoes is ready for modification. Here are a few swaps and extra ingredients that you can add to the skillet to make it unique:
- You can substitute smoked sausage for the bacon.
- You can substitute steak seasoning for the everything bagel seasoning
- For extra green, add a few handfuls of chopped kale or cabbage shredded.
- Add the diced bell pepper at the same time you add the green beans.
- Add crispy French-fried onions to the top
- For a flavor boost, add minced fresh red pepper or crushed garlic.
Skillet with Potatoes and Green Beans
Ingredients
- 1.5 lbs. baby potatoes $3.99
- 1 tsp sal (to salt boiling water) $0.05
- 4 oz. bacon $1.15
- 1 yellow onion $0.37
- 12 oz. frozen cut green beans $1.25
- 1 tsp everything bagel seasoning $0.10
Instructions

Place the potatoes in a large pan. Add 1 tsp of salt and cover with water. Cover the pot with water and bring it to a rolling boil on high heat. Reduce the heat to medium high and continue to boil the potatoes until they are tender to the fork (about 8 minutes). Drain the potatoes using a colander.

While the potatoes are braising, cook the bacon over medium heat in a large pan until it becomes crispy and brown. Remove the bacon. To get the best flavor, drain the bacon fat or leave it in the pan.

While the bacon cooks, dice the onions. Add the diced onions to the skillet after removing the bacon. Continue cooking over medium heat for a few minutes until the onion becomes soft and slightly brown.

Add the potatoes and onions to the skillet. Stir them briefly to coat in fat. Then let them cook for a few minutes.

Add the frozen green beans once the potatoes are a little brown (no need for thawing). Continue cooking and stirring until the green bean are heated.

Add the bacon back into the pan along with the Everything Bagel Seasoning. Stir well to combine. Taste and adjust salt, pepper or bagel seasoning according to your taste. Serve immediately!

How to Make Potatoes and Green Bean Skillet with Step by Step Pictures
Cut 1.5 lbs. Cut 1.5 lbs. Cover them with water and place in a pot. Add a teaspoon of salt to the pot. Put the lid on and bring to a rolling boil. After it boils, reduce the heat to medium high and let the potatoes boil for 7-8 minutes, until they are tender. Drain the potatoes using a colander.
Cook 4 oz. In a large pan, cook the bacon over medium heat. Remove the bacon from the pan. To get the best flavor, drain most of the fat from the skillet or leave the remaining 2 Tbsp.
As the bacon cooks, dice a yellow onion. After removing the bacon, add it to the pan and continue cooking over medium heat for a few minutes until the onions become soft and slightly brown.
Add the potatoes that have been drained back into the skillet. Stir them briefly to coat in fat and then cook them over medium heat, stirring only once every few minutes.
Add one 12-oz. bag of frozen cut green beans. Add one 12oz. bag of frozen green beans cut into pieces. Stir together and cook the green beans over medium heat until they are heated.
Chop up the bacon and add it to the skillet with 1 tsp everything bagel seasoning. Stir to combine everything, taste and adjust seasonings to your preference. Serve immediately!
