Peanut Cookies are probably one of the easiest to make. You only need roasted peanuts and sugar, flour, oil from peanuts, a pinch salt, two egg yolks for the glaze, and some peanut oil. It sounds simple, doesn't it? It is, and I hope you'll give it a go.





This is an updated version of the post that includes a video guide to cooking. (Originally posted on 02/06/10).

Peanut Butter Cookies

Ingredients

Roasted peanuts, finely ground
Sugar 150 g
350 g All Purpose Flour
Sea Salt
200 ml of Peanut Oil
2 Egg Yolks, beaten (for glazing)

Method

Pre-heat the oven to 325@F.

Combine the flour, sugar and salt in a large bowl.

Mix the oil into the dry mixture with a wooden spatula. Combine the mixture using your fingers to create a crumbly dough.

Shape the dough into small balls. Use a chopstick and make a shallow indentation. Brush the dough with beaten egg yolks.

The cookies should be baked for approximately 22 to 25 min. Allow the cookies to cool completely before storing them in an airtight container.

About 90 pieces.
