There are days in life where your body just CRAVES out-of-control decadent meals. Something like Goat Cheese stuffed Chicken Breasts.
But then, SOME days you just crave something simple, with minimal prep time and not so many ingredients. Our taste buds can never make up their darn minds can they? Annoying little creatures they are.
Now, being a food blogger who cooks all.day.long, I am generally pretty wiped when it comes to dinner time.
In recent days, I would turn to a meal like a quick and easy honey mustard chicken stir fry. And by "stir fry" I mean blueberry oatmeal with cheesecake swirl. Don't lie, you've made oatmeal for dinner too.
BUT THEN, I made roasted air fryer cauliflower and threw some ranch and avocado on and HOLY WHOA. A revelation! SO delicious and nutritious and SO easy.
So, naturally, I made it into a recipe but nixed the air fryer since I know not everyone has one. <3
A Kid Friendly Side Dish
So I'm not a parent myself, but one thing we all know and can agree on is that kids can be so picky! Making meals for your family can be tricky when you've got a picky eater in the house because you want to make delicious food that everyone wants to eat, while also making healthy choices! Air fryer sweet potato fries are a great side for those little ones, and today I'm going to show you ANOTHER dish they're sure to love: THIS roasted cauliflower with ranch! It's got that crispy on the outside, soft on the inside thing going on, and what kid DOESN'T love ranch!?
Parmesan Roasted Ranch Cauliflower Ingredients
This tasty side uses wholesome, healthy ingredients to create the most satisfying, comfort food side dish EVER. Cauliflower never tasted so good and this is going to be a new favorite for you and your crew. Here's what you'll need to grab from the store to make it:
- Cauliflower
- Olive Oil
- Ranch mix
- Finely Grated Parmesan Cheese
- Sea Salt
- Avocado
- Dried Parsley
- Dried Dill
- Garlic Powder
- Onion Powder
- Salt
- Pepper
Can I use Ranch dressing instead of Ranch seasoning?
I'm big on mixing things up and using what you have on hand, but sometimes you don't want to stray too far from the recommended ingredients and this is one of those times! When making this loaded cauliflower, it's important that you use a ranch seasoning mix rather than ranch salad dressing! The texture is different (wet vs. dry) so the dry mix is essential to the success of this recipe!
Can I use a different Cheese?
If you're looking to experiment with cheeses in this recipe, I say go for it! Cheddar cheese or a mexican blend of cheeses would probably be a delicious substitute, just as long as you ensure whatever cheese you use is grated really finely!
How to make Parmesan Roasted Ranch Cauliflower
Toss
Set your oven to 400 degrees and let it preheat. While it's heating up, place the cauliflower and oil into a bowl and toss. Mix up the ranch mix and add 2 tablespoons of it to the cauliflower. Toss again until it's coated evenly.
Bake
Spread the cauliflower evenly onto a large rimmed baking sheet, ensuring the florets don't overlap. Place it in the oven and cook for 15 minutes. Then, remove the pan from the oven, stir around the cauliflower a bit, and cook another 10-12 minutes or until the cauliflower is golden brown.
Finish it off
Transfer the cooked cauliflower to a large bowl. Add the cheese, avocado, and another pinch of salt and toss to evenly mix it! Serve it up and DEVOUR!
What to serve with Parmesan Cauliflower
This delicious cauliflower recipe has ALL the flavor and texture you're looking for and can act as a tasty snack all on its own! If you want to dress it up to make it a meal, I recommend pairing it with Ranch Baked Greek Yogurt Chicken to keep that ranch theme going, as well as some greens: a healthy broccoli greek yogurt salad or a grilled zucchini and green bean salad would compliment it really well! And to top it off this keto chocolate cake is a great low-carb dessert.

Ingredients
- 1 Lb Cauliflower, cut into large florets
- 2 Tbsp Olive oil
- 2 Tbsp Ranch mix (recipe below)
- 2 Tbsp Finely grated Parmesan cheese
- Pinch of sea salt
- 1 Large avocado, cubed
Ranch seasoning:
- 1 Tbsp Dried Parsley
- 1 tsp Dried Dill
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 3/4 tsp Salt
- 1/3 tsp Pepper
Instructions

Pre heat your oven to 400 degrees.

In a large bowl, toss together the cauliflower and oil. Mix the ranch mix together and add 2 Tbsp of it to the cauliflower, tossing to coat.

Spread onto a large, rimmed baking sheet in a single layer. Try to leave some space between then florets.

Although almond flour isn’t considered to be a “superfood”, it is rich in healthy fats and fibre.

If you don't yet have a garlic presse, you may be wondering where to get one. We have some tips to help get you started.
First things first: you'll need a large bowl. Place the bowl beneath the press, and then pour the crushed garlic in it. Now adjust the pressure regulator to the maximum.
Next, move the handle clockwise so that you hear a click. You will be able to slide the blade over the bowl by lifting the top part of your press. Continue to turn the handle counterclockwise, until the blades are closed.
