This Coconut Lime Paleo Pineapple Bread will blow your mind. Or is it off the heezy...or hizzy?
What is it supposed to be? I'm sure that this is bread. It is legal.
This bread is so delicious that I took it with me to Canada when I visited a few weeks ago. It was a must-try for my parents. It travels well.
This means I have made the bread a long time ago...and am still dreaming of it.
You read it right. The macadamia-nut streusel is crunchy and delicious.
Macadamia. Nut. Streusel. Let that siiiiink go.
This is similar to the coconut whipped crème and grilled pineapples stacks, or when we had that oven-baked mahi mahi crusted with macadamia nuts. BUT BETTER.
It's worth making just for the aroma that fills your home when you bake this bread. It's better than banana pineapple bread, which is very similar except that it contains banana.
The taste is a better reason, I assure you.
I have no idea how to describe how obsessed I am and how in love I am with the bread.
Oh, and...it's PALEO! We recently enjoyed paleo banana cake and paleo chocolate banana bread. Buzzword FTW!
Paleo recipes, as you will see if I update the photos and text in this post, are nothing new or exciting. You get them pretty much every week. Back in the day it was exciting and NEW.
Anyway. I'm actually getting a bit shaky from the excitement to share this recipe with you. So, imma stop writing before things get out of control.

Coconut Lime Bread Recipe
Ingredients
- 1/4 cup Unsweetened Coconut Flakes
- 1 tablespoon Coconut Sugar
- 1/2 cup Coconut Flour plus 2 tablespoons, sifted (63 g)
- 1/4 teaspoon Baking Soda
- 3/4 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1/4 cup Honey plus 1 tablespoon, divided
- 1/4 cup Coconut Oil melted
- 6 Eggs room temperature
- Fresh Lime Juice and zest of 1/2 large lime
- 1 teaspoon Pure Vanilla Extract
- 20 ounces Canned Pineapple drained (crushed pineapple)
The Topping:
- 1/3 cup Macadamia Nuts finely chopped
- 2 tablespoons Coconut Flour
- 2 tablespoons Coconut Sugar
- 1 tablespoon Coconut Oil melted
Instructions

Pre-heat your oven to 400degF. Line the bottom of the loaf pan with parchment and spray the sides with cooking oil. Set aside.

Place the coconut flakes on a small baking tray lined with parchment paper and bake for 3-4 minutes, until they are lightly browned. Mix the toasted coconut flakes with 1 tablespoon of coconut sugar in a small dish. Place aside and reduce the temperature of your oven to 350degF.

Mix together in a large mixing bowl the coconut flour, baking powder, baking soda and salt. Also add the coconut sugar/toasted coconut mixture. In a small bowl, place 1 tablespoon of the mixture.

In a large bowl, beat 1/4 cup honey, coconut oil melted, eggs, lime zest/juice and vanilla extract with an electric hand-mixer. Set aside.

Pour the pineapple out onto a large towel and squeeze the moisture. Make sure to squeeze out all the moisture, since you want your pineapple to be completely dry.

Mix the dried pineapple with 1 tablespoon flour mixture, 1 teaspoon honey and 1 tablespoon reserved. It's okay if the mixture looks thick and gloppy. Separate the pineapple pieces with a spoon.

Add the dry ingredients slowly to the wet ingredients and mix until combined. Stir in the pineapple mix and let it stand for 10 min.

Mix the sugar, oil, coconut flour and finely chopped macadamias while the batter is still standing. Mix until oil is evenly coated over the mixture.

After the batter is set, sprinkle the macadamia crumble on top of the loaf. Gently press it to adhere.

To prevent the top from burning, tent the loaf for 30 minutes. Continue baking for another 10-15 minutes or until the toothpick inserted into the middle comes out clean.

Allow to cool in the pan completely before cutting.

In India alone, there are more than 1000 species of herbs that are used for medical purposes. This includes Ayurvedic medicine, Unani medicine, Siddha medicine, Homeopathic medicine, and Chinese medicine.
The most common ingredient found in these medicines is ginger. Ginger contains volatile oils that give it its aromatic flavor. These oils contain anti-inflammatory properties that make them useful against arthritis, fever, vomiting, and indigestion.
Ginger also helps relieve nausea and stomach cramps caused due to pregnancy. Pregnant women often consume ginger tea to reduce morning sickness. Ginger is also commonly used for cough and cold relief.
Another spice that is known to have medicinal value is turmeric. Turmeric contains curcumin which has been shown to inhibit tumor growth. This makes it an effective cancer treatment.

The best way to use plants to heal wounds is to consume them directly. However, there are ways to apply the power of plants to treat wounds without eating them.
First, soak a cotton ball in an extract from the St John's Wort herb. This product contains salicylic acid, which helps reduce inflammation.
Next, place the soaked cotton ball on the wound. Avoid applying the herb directly to open cuts, burns, or puncture wounds. If you feel any burning sensation, remove the herb immediately.
