What is Nashville Hot Chicken?

This is exactly what it sounds like - crispy, heat-packed fried chicken from Nashville in Tennessee, which you can make at home using a buttermilk-based marinade and a flour-based coating to ensure crispness. The Nashville finish includes a buttery hot sauce, buttermilk, and a thorough flour-based coating.

You can reduce the cayenne to your taste if you prefer a softer touch. You can use any hot sauce you like, depending on your taste.

These biscuits can be served with cold pickle chips and dill sauce.

Nashville Hot Chicken

Crispy, crunchy and saucy, this is the perfect fried chicken. The chicken is served with biscuits, dill pickle fries and a buttery sauce.

Servings six servings

Ingredients

  • Kosher Salt and freshly ground Black Pepper To taste
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 cups buttermilk
  • 2 large eggs
  • 4 lbs skin-on, bone-in chicken thighs
  • 4 cups self-rising flour
  • 8 cups canola oil

Butter mixture

  • 1/2 cup unsalted butter
  • 1/4 cup hot sauce
  • 1/2 teaspoon cayenne pepper

Instructions

  • BUTTERMILK MULTIPLE: In a large mixing bowl, whisk together 1/2 a cup of warm water, 5 tablespoons of salt, 2 tablespoons of pepper, garlic powder, onion powder, and 1 teaspoon each of onion powder, oregano, and garlic powder. In a large bowl, whisk together 1/2 cup warm water, 5 teaspoons salt, 2 teaspoons pepper and onion powder.
  • Combine chicken with BUTTERMILK MIXTURE in a gallon-sized Ziploc bag, or a large bowl. Marinate for 8 hours up to 1 day. Turn the bag every now and then. Drain the chicken and remove it from the marinade.
  • Work one chicken at a time and dredge it in flour, until it is evenly coated. Gently toss the chicken back into the flour and let it stand for 15 minutes. Gently toss the chicken again until it is evenly coated. Remove the excess flour and remove it by shaking.
  • Heat oven to 325 degrees F.
  • Heat the canola oil over medium-high heat in a large Dutch oven or stockpot until it reaches 350 degrees F using a deep fry thermometer.
  • Fry the chicken in batches until golden brown. Flipping it once is enough. Transfer the chicken to a baking tray fitted with a rack.
  • Bake until the chicken is cooked through and reaches an internal temperature of 175°F, approximately 10-15 minutes. Brush chicken with butter mixture.
  • Serve with biscuits or dill pickle chip chips, as desired.

  • Combine butter, cayenne and hot sauce in a small pan over medium heat. Bring to a rolling boil, reduce heat, and simmer, stirring frequently, for about 1-2 minute.
