I've always loved bowl meals because they are so flexible. You get to enjoy a variety of colors, textures and flavors, plus they are great for meal preparation (I love having ready-made grab-and-go lunches). I made Mediterranean Turkey Bowls this week. These bowls are simple, fresh and very satisfying. Plus, I can change up the ingredients based on what's on hand or what I want. These bowls are a great option if you want something easy and new to prepare for lunch.

What if I want to use a different meat?

The meat or protein can be changed to suit your taste. You could use ground beef or even Yogurt Marinated Chicken.

Want to make this vegetarian? Add some chickpeas, or cannellini, to the bowl with the same seasonings as the ground turkey. You may also want to add a squeeze of lemon.

What else can you add?

Search your refrigerator and freezer for Mediterranean-inspired ingredients and add them to your bowl. Here are some delicious ideas.

  • Feta

  • Spinach
  • Green Onion
  • Hummus
  • Bell peppers
  • Artichoke hearts
  • Quinoa
  • Zucchini, fresh or grilled

P.S. These bowls can be made over a green bed instead of rice.

How long do they last?

These bowls were made for my meal preparation. I generally only prep for a maximum of four days because the quality of my meals begins to degrade after this time. For the best taste and texture, I recommend keeping these bowls in the refrigerator for up to 4 days. Due to the fresh veggies and yogurt sauce, these Mediterranean Turkey Bowls cannot be frozen.

Do they serve them hot or cold?

These bowls are delicious both hot and cold. The rice and turkey are warm when you eat them immediately after preparation. This contrasts beautifully with the cold, fresh vegetables. When I use leftovers to prepare a meal, I like to eat them chilled. Both ways are delicious! You can also reheat rice and meat for meal preparations. Just package them in separate containers.

Garlic Dill Yogurt Sauce

  • 1 cup full-fat plain yogurt $1.12
  • 1 Tbsp lemon juice $0.06
  • 1/4 tsp garlic powder $0.02

  • 1/4 tsp salt $0.02

Ground Turkey

  • 1 Tbsp olive oil $0.12
  • 1 lb. ground turkey $4.99

  • 1/4 tsp freshly cracked pepper $0.02

Instructions

  • The flavors will blend better if you make the yogurt sauce with garlic and dill first. In a large bowl, combine the yogurt, lemon, garlic powder and dill with salt and pepper. Refrigerate until ready to use.
  • Then, start cooking your rice in the way you prefer (rice cooker or stovetop). Use any type of grain, but make sure you follow the cooking instructions that correspond to it.
  • Cook the turkey while the rice is cooking. Heat the olive oil in a large skillet on medium. Once the oil is hot, add in the turkey ground and continue cooking over medium heat.
  • Add the dried oregano and salt to the skillet when the turkey is almost done cooking. Stir the mixture into the turkey, and continue to cook for another 2-3 minutes or until the meat is cooked. Remove the turkey from heat.
  • Cut the cucumbers into quarter rounds, finely chop parsley, and thinly slice red onions.
  • Once all the ingredients have been prepared, you can start assembling your bowls. Divide the rice, turkey ground, tomatoes, cucumbers, red onions, and parsley among four bowls. Enjoy! Drizzle the yogurt sauce on top just before serving.

You can use any kind of rice, whether it's white, brown, basmati or jasmine. Follow the instructions on the type of rice you choose. Check out our How to Cook Rice video for more information on how to cook rice.

How to Make Mediterranean Turkey Bowls: Step by Step Pictures

To allow the flavors to combine, prepare the garlic-dill yogurt sauce before you start cooking. Combine 1 cup plain yogurt, 1 Tbsp of lemon juice, 1/4 teaspoon garlic powder, 1/4 teaspoon dried dill and 1/4 teaspoon salt. The sauce should be refrigerated until you are ready to serve.

Cook one cup of rice. (One cup of uncooked rice yields approximately three cups when cooked.) For convenience, I used a Rice Cooker. If you prefer to cook rice on the stove, please check out our How to Cook Rice Tutorial.

While the rice cooks, prepare the turkey ground. Heat a large pan with 1 Tbsp of olive oil on medium. Add 1 lb. Ground turkey. Over medium heat, cook the turkey until it is almost cooked. Add 2 minced garlic cloves, 1/2 tsp of dried oregano and 1/2 tsp of salt at this point. Continue cooking for another 2-3 minutes, or until turkey is cooked. Remove the turkey from heat.

Slice 1 pint of grape tomato in half. Chop one cucumber into quarter rounds. Thinly slice 1/4 of the red onion. Finely chop 1/4 cup of fresh chopped parsley. You can make the red onion milder by soaking them in ice-cold water for five minutes.

As soon as all the ingredients have been prepared, start assembling the bowls. Top each bowl with 1/4 of the turkey, and add about 3/4 cup cooked risotto. Divide the tomato, cucumber, onion and parsley among the four bowls.

Pour the yogurt sauce on top just before serving (about 1/4 cup for each bowl).

Almond meal can be substituted for almond flour and is versatile enough to be used in baking, cooking and even making nut-free meals.

Almond flour could also contain gluten making it difficult for some people to digest. It is important to avoid gluten-free products if you have celiac or other digestive disorders.

Almond flour isn't considered "superfood", but it is high in healthy fats, fibres, protein, vitamin E, and sodium.

The nutritional benefits of the almond meal include magnesium, copper, iron, zinc, manganese, phosphorus, potassium, calcium, and vitamins A, B1 (thiamin), and C. In addition, it provides 25 percent of the daily value for folate, 20 percent for niacin, 15 percent for pantothenic acid, and 5 percent for riboflavin.
