This easy keto egg salad recipe is the best you’ll ever taste and has only 4 low carb ingredients.
You can enjoy the healthy egg salad in lettuce wraps or a lettuce cup as part of a keto diet weekly meal prep, pop a spoon full on top of celery or cucumber slices, spread over keto bread or simple devour by the creamy spoon full.
If you find that the egg salad becomes watery through the cooking process, the easiest way to fix it is to just add another chopped egg, give it a mix and the salad should become thicker once again.
The egg salad may not have had enough time in the fridge to thicken up, so you may even find that a little more time in the fridge will not only thicken the salad but you’ll also find that the egg salad tastes even better when the flavors have developed in the fridge for a few hours.
How To Make Hard Boiled Eggs
I tend to boil up a pot of hard boiled eggs every weekend to enjoy as grab and go keto staple snacks through the week.
There are loads of different ways to hard boil eggs. My chosen method to hard boil eggs is to cover 8 to a dozen eggs in a saucepan with water.
Place eggs on the stove top and as soon as the pot comes to a rolling boil, set a timer for 10 minutes.
Then, immediately remove the pot from the heat, carefully drain the water, cover with cold water, then repeat the process by draining and covering with cold water until the eggs are chilled to room temperature.
Move the eggs to a bowl, pop in the fridge and enjoy within 5 days.
Easy Egg Salad Ingredients
Here are the 4 simple ingredients included in the classic egg salad recipe:
Eggs – hard boil fresh eggs to use in the simple recipe. You can use large eggs or any size that you regularly buy, if they are small eggs then you’ll just need to include more in the recipe.
Salt & Pepper – I’ve only used sea salt in my recipe, but you can feel free to add a shake or two of black pepper if you’d like.
Lemon – a little bit of fresh lemon zest and juice is added to provide a pop of flavor to the egg salad.
I simply love egg salad with lemon mixed through, I find that it’s the secret ingredient that elevates a classic recipe to an exceptional level.
Creamy Ingredients – you can include one or more creamy ingredient from sour cream, mayonnaise such as avocado oil mayonnaise or sugar-free mayo or a keto friendly yogurt such as plain, natural or plain Greek yogurt which tends to be low in net carbs.

Here are more ingredient ideas that you can mix into your low-carb recipe:
Mustard – stir through half a teaspoon to a teaspoon of Dijon mustard or another mustard option.
Green Onions – stir through or top your bowl of egg salad with chopped green onions.
Avocado – make an avocado egg salad by adding in as much chopped avocado as you’d like.
Paprika – flavor the salad with a sprinkling of paprika or your seasoning of choice.
