It's funny that what you dip into is more important than WHAT you dip in. All my favorite crackers, nachos and crusty bread are great, but they don't matter when you have a spinach spread. This spinach dip is my favorite, as it uses cottage cheese instead of cream cheese and low-fat sourcream in place of the fattier version.

It's nice to know that I don't have to worry about gaining weight. It's important to keep track because it is easy to lose track when you are eating finger foods like these and focusing on The Big Game, or your conversation with your guests.

Why You'll Love This Recipe

  • Since the caveman days, spinach and cheese has been a great combination.
  • The feta gives the dip a nice salty taste. If you eat this dip with salty nachos or crusty bread, it won't be a problem. But if you eat the dip with naan or crusty bread, you will get your salt fix.
  • This dish can be served hot or cold. You can prepare it in advance and then serve it straight out of the refrigerator or after a couple minutes in the microwave or oven.

Is this Spinach dip healthy?

  • The cheese is plentiful, but the fat and calorie count are minimal.
  • Cottage cheese is used instead of cream cheese in many spinach dips. It is low in fat but high in protein. I don't suggest you eat it after you hit the gym, but you know... each ounce of proteins helps!
  • This is a delicious way to incorporate superfood spinach in your diet, without having to eat a salad.

Ingredients

A cheese makes up one-third of all ingredients. This is a great recipe ratio.

  • 8 oz low-fat smooth cottage cheese
  • 1 cup low-fat sour cream
  • 10 oz baby spinach
  • 1 tsp crushed garlic
  • Half a teaspoon of salt
  • 1/4 tsp Pepper
  • Half a cup of grated Parmesan cheese
  • 1 1/2 cups of feta cheese
  • Oregano, 2 tablespoons

Instrucciones

Prep

Pre-heat the oven to 375degF.

Steam

Baby spinach can be steamed or wilted until it is cooked. Squeeze as much water out as you can. It will be easier to pick up in the dip if you shred it.

Mix

In a large bowl, combine the cottage cheese with the sourcream, baby spinach and the garlic. Add the salt, pepper, oregano and half of the Parmesan.

Bake in the oven heated to 20-25 minutes. Sprinkle the remaining feta cheese and Parmesan on top.

Variations

  • Add artichokes or crispy bacon bits for a delicious extra.
  • Cream cheese is a better alternative to cottage cheese. The C.Q. will be raised. This will increase the F.Q. (fat quotient).
  • Use mozzarella instead. This is what I would recommend if you are concerned about sodium, either for health reasons or from a salt perspective.
  • Sprinkle smoked paprika over the top. It's not an obvious addition, but after you taste it you won't want to eat spinach dip again without it.

FAQs

Why is my dip a little runny?

There is so much liquid that spinach contains, you must squeeze out as much as possible.

Can I use frozen spinach?

You can absolutely do so, but make sure you squeeze out all the liquid.

Why isn't my cheese browning?

You can brown the top of the pizza once it has been baked.

Can I make this vegan?

I do have a recipe that is vegan for spinach dip. Try it!

How to Store Spinach Dip

Store the dip in the refrigerator for up to four days. If it smells or looks off, throw it out. Let it sit at room temp for 15 minutes before reheating it. It can be heated in the microwave, or on low heat on the stove. Add a little cream if it seems dry.

If you must, freeze the dip. However, I do not recommend it. The texture and taste will be affected.

  • Pour mixture into oven-proof dish and top with remaining feta cheese and Parmesan. Bake in heated oven for about 20-25 minutes.

Notes

  • You must squeeze out as much water from the spinach as you can to avoid a watery dip. You can use paper towels to absorb as much water as you can.
  • You can also use frozen spinach. Just squeeze out the excess water.

This is because consumers are looking for healthier foods. Organic food sales have been increasing in all age groups.

Younger generations are choosing organic food more often than older generations. Millennials are twice likely to choose organic food than the baby boomers. 25 percent of organic food purchases are made by young adults younger than 35.
