Coconut Magic Cookie Bars Gluten-Free
Ingredients
- 1 can Full-fat Coconut Milk. Do not use low fat! (14 oz)
- 1/2 Cup + 3 Tbsp Honey, divided (Agave for Vegan version)
- 2/3 Cup Almonds (87g)
- 1/2 Cup Unsweetened coconut flakes
- 1/3 Coffee Coconut Oil At room temperature (should have the consistency of softened butter).
- 3/4 Cup Coconut flour, Sifted (66g) * READ NOTES
- 2 Tbsp Unsweetened cocoa powder
- Sea salt
- 1/2 Cup Dairy-free dark chocolate chips
- 2 Tbsp Melted almond butter, divided
Instructions

Mix the coconut milk, 1/2 cup honey (or agave) in a large saucepan over high heat. Keep the mixture aside for later. The mixture should boil. Boil for one minute while stirring continuously. Turn the heat to medium. After 1 minute, reduce the heat to low and let the sauce simmer for 16-20 mins, stirring occasionally, until it is reduced to 1 Cup. **

Once the sauce has boiled, put the coconut and almonds on small plates and bake at 350 degrees until golden brown. The coconut takes about 4-5 minutes, while the almonds take about 10-12 minutes. After the almonds have been toasted, chop them finely and set them aside.

As the sauce cooks, line an 8x8-inch pan with parchment paper and spray the sides with coconut oil spray. To ensure that the parchment paper is secure, spray the bottom of your pan with coconut oil spray.

Use an electric hand mixer to beat the coconut oil and 3 Tbsp honey together in a large bowl until it becomes smooth and creamy. Mix in the flour, cocoa powder, and salt until you have a soft dough.

Place the dough in a well-oiled pan. It will be difficult, but it is possible. Just be patient. It was easiest for me to use my palms and then rinse them off as I pressed the dough in. Bake the crust only after the coconut milk mixture has reduced.

After the coconut milk mixture is reduced, pour into a measuring cup. Allow to cool to thicken while the crust bakes.

Bake the crust for about 7-8 minutes in the 350-degree oven, or until it is lightly golden brown. The crust will likely rise in some areas. After the crust has been removed from the oven, you can quickly push it back down with a small spoon.

Sprinkle the chopped nuts over the crust, and gently press them in. Sprinkle evenly with the chocolate chips, then the coconut flakes.

Spread the coconut milk mixture even more heavily on top. Gently shake the pan until the coconut milk mixture sinks between the layers. Add 1 tablespoon of the melted almond butter to the pan.

Bake for 27-28 minutes.

Cool the mixture in the oven until it cools to room temperature. Cover the pan with almond butter and let cool in the refrigerator for at least one hour. ***

Next day, use a sharp knife to cut around the pan's edge.
