Wouldn't it be great if Chipotle opened a shop in your home? You can't have Chipotle in your house, but I can show you how to make a popular dish from their menu -- fajita vegetables -- right at home. The process of getting the right mix of red onions, colorful bell peppers and Portobello mushroom was a long one (and there were a few burned onions).
We made sure to add all the love and warmth that you've come to expect from our other family favorites - like our Mini Bell Pepper Nachos or the Mexican Sweet Potato Noodles wrap. We sprinkled our Chipotle spices to make this dish unique. There's no need to wait in line at the counter.
Are Fajita Veggies Healthy?
They're veggies, right? After all, they're vegetables, right? These fajita vegetables are packed with vitamins thanks to their colorful bell peppers, Portobello mushroom superfood status and other veggies. Did I mention that we drizzle everything with olive oil, which is good for your heart? We've also added cumin, oregano, and paprika to the mix. These spices will help you digest, add antioxidants to your food, and they taste good.
Ingredients
Are you ready to prepare a delicious Tex-Mex meal that is healthy? What you will need
- 2 tbsp olive oil
- Red onion
- 3 portobello mushrooms
- Red pepper
- Yellow pepper
- 1 green pepper
- 1 tsp cumin ground
- 1/2 tsp paprika, smoked
- Oregano, dried 1 tsp
- 1/2 tsp Chipotle pepper

If you want to add a little protein, then cooked chicken, beef strips or tofu will go well with your Chipotle-inspired Fajita vegetables.

These fajita vegetables are also delicious when served with corn tortillas or egg-white wraps for a gluten free option. You can top the meal with a generous serving of guacamole and sprinkle it with shredded cheese. Serve atop Keto Mexican Cauliflower Rice, or One-Pan Mexican Quinoa. Garnish with fresh chopped cilantro.
How to prepare and store fajita vegetables
Preparing these fajita vegetables ahead of time is easy. Simply slice them at your leisure and store them in an airtight jar. You can also cook them and then store them in an airtight jar. Leftovers can be preserved using the same method. The leftovers will keep for 3 days in the refrigerator. If you want to eat the vegetables again, heat them in a skillet or microwave.
Fajita Veggies (Chipotle Copycat)
