Ensalada de Aguacate is a Puerto Rican style Avocado Salad that's quick, easy, and so delicious and refreshing, you'll crave it even on the hottest days. I use cooling tomato slices to bulk up this salad. It's technically an Ensalada de Aguacate y Tomate, but who wants 150 times to type that? This girl. Oh, it's under $1 per serving! #win
What is Ensalada de Aguacate?
Avocado salad is one of the most popular Latin dishes, and each family puts their own twist on it. This avocado salad is made with slices of creamy, rich avocado, onions and tomatoes, dressed in oil and vinegar. Some versions include bell peppers, radishes or grapefruits. Others may also contain cheeses such as Mozzarella or Queso Fresco, and other ingredients like sliced chicken, walnuts or hard-boiled egg slices.
What you'll need
You don't need to be as creative with this Avocado Salad as I was. The presentation of this salad is stunning. I like to make salads that have a WOW factor. If you want to serve the salad in bowls, be sure to gently mix the ingredients. Otherwise, the avocado will crumble faster than reality show housewives. You'll need the following ingredients to make Ensalada de Aguacate.
- Avocado This fruit adds creamy, slightly nutty and creamy notes to our salad. I'm sure someone will ask me, someplace, what they can substitute for avocado in the salad, because they don't like avocado. To them, I tell them to leave it out, and enjoy a delicious tomato salad. Please note that I am not sarcastic and have given a lot of good advice. Are you proud of my work? I've grown!)
- Yellow onion This is a spicy yellow onion that cuts through the avocado's fat. It can be substituted with any onion, even green onion. Red onion can be less pungent if you soak it in cold water for a minute. Skip it if you don't like the onion taste.
- Tomato : This fruit gives the salad a tart sweetness and bulks it up, keeping it affordable. You can use any ripe tomatoes you have. You can substitute tomatoes with grapefruit, cucumber or mango if you don't like them.
- Olive Oil This is the fat that we use in our simple dressing. You can substitute olive oil for any other oil, such as sunflower or nut. Be aware that the taste profile will be drastically different.
- Distilled white vinegar and Apple Cider Vinegar are the acids that we use in our dressing. You can use them separately or mix the two to get a deeper flavor. You can use any clear or light-colored vinegar. The more punchy the vinegar the better.
How To Pick Avocados
- The avocado will be ripe when the skin turns blackish-dark green. The avocados with bright green skin are not ready.
- If you gently press your finger into the avocado's skin, it should yield slightly. If the avocado is mushy or squishy, it has probably passed its prime.
- Remove the remaining stem from the top of an avocado. It's ripe if it comes off easily and shows a lime-green top. It's not ripe if it doesn't flutter. If the top of it is black and it has flipped off, it's not ripe enough for salad. However, it might be good for guacamole.
How To Ripen Avocados
Place an avocado in a bag of paper with an apple or banana to help it ripen quickly. Close the bag, and let it sit at room temperature. Apples and bananas release natural gases that will accelerate the maturation of your avocado. Some Tik Tok users think that you can ripen avocados in the microwave, but you are only cooking it, which will soften it, but still taste like a unripe avocado.
What to serve with avocado salad
This Ensalada de Aguacate goes well with Puerto Rican dishes such as Arroz con Pollo, Chuletas Guisadas or Pollo Guisado. You don't need to be a Latino to enjoy this dish! It's a great side dish for your next cookout. It goes well with BBQ Ribs or Sausage Kebabs.

- 2 Tbsp distilled white vinegar $0.07
- 1 Tbsp apple cider vinegar $0.03
- 1 Tbsp olive oil $0.11
- 1/8 tsp salt, plus more to taste $0.01

- 2 medium tomatoes $0.90
- 1/2 medium yellow onion $0.38
- 2 medium avocados $1.98

Instructions

Slice the tomatos into rounds of 1/4 inch thickness, and then cut the rounds in half. Slice the yellow onions into half-moons of 1/4-inch thickness. Cut the avocados in half-moons of 1/4 inch thickness. If the avocados have a large size, cut the half moons in half.

Add the half of the tomato slices in a single layer to a large plate. Sprinkle 1 pinch of sea salt and 2 teaspoons of dressing over the tomatoes.
