This recipe has been a game changer for us. We've recently cut back on carbs in our home, but we couldn't give up our pastries. This recipe is our favorite guilt-free treat. Sweetened with the sweetener xylitol and filled with almond flour goodness, it is topped with chocolate-pumpkin.

Ingredients

After you have finished raking leaves, gather these ingredients and start baking!

  • 2 cups almond flour
  • 1/4 cup sweetener granulated (I used xylitol).
  • 1 tbsp of baking powder
  • Half a teaspoon of salt
  • 1 tsp of cinnamon
  • Pumpkin puree: 1 cup
  • 3 eggs
  • 1/4 cup dark chocolate (optional).

Instrucciones

Prep

Pre-heat the oven to 325degF. Line a loaf pan with parchment paper.

Mix

In a large bowl, combine all ingredients (including chocolate chips if using) until smooth.

Bake

Pour the batter in the loaf pan and bake it for one hour. If the knife comes out clean after inserting it into the middle of the cake then the loaf is ready.

Rest

Let the loaf sit for 20 minutes in the tin before removing it. Let the loaf cool down on a rack.

Absolutely. Coconut flour and other low-carbohydrate flours can be mixed in. Coconut flour absorbs liquid more so you may need to adjust the amount.

What can I substitute for xylitol

No problem, you can switch sugars. You can use Erythritol, Stevia or, if you don't want to go low-carb completely, maple syrup or coconut sugar.

Can I add other spices?

Spice it up! I like allspice, nutmeg or clove.

What Keto Pumpkin Bread Variations can I make?

Add walnuts, pecans or coconut flakes. Or, swirl in some cream cheese. Around the holiday season, cardamom and ginger are both great. What could be better than a pumpkin bread that is free of guilt around Halloween?

If you want to store it for a long time, cut it into slices and freeze it. The frozen pizza should keep for 3 months. If you want to eat a piece, defrost it in the refrigerator overnight and then microwave it for 30 seconds. This will look like a fresh loaf of bread straight from the oven.
