Today I am jamming out to the super-hearty, spicy and creamy JAM-balaya beat.

You're probably glad you weren't there to see it. I'm definitely not one of those dancers with poise, grace and all that.

More like flailing arms, awkwardly wiggling legs and I-may-have-possibly-turned-into-a-chicken head thrusts.

On a regular basis, the huberoni tells to me "stop doing that".

Then I cooked him a pot of delicious, tender rice with crunchy celery, sweet tomatoes, and a dash of spicy Cajun. With sausage.

  • You can even REPLICATE for your husband who can't make toast. Everybody wins. You might even convince your husband to cook dinner as you flail around your arms to a super-catchy, upbeat song.

Is Jambalaya Healthy?

Jambalaya, like most stews, soups and other meals of this type, is only as healthy as the ingredients you use. In this instance, it's on the healthier side. We use monounsaturated olive oil (the good kind). Avocado oil is another healthy option. You get many nutrients from the vegetables. In jambalaya, the rice is typically white. However, you can use brown rice which has more fiber, vitamins and minerals. Cajun seasonings are often high in sodium, so choose low-sodium stock and be mindful of this.

Ingredients

This recipe will require you to "dice up" a whole deck of vegetables.

  • I used olive for 1 tbsp of vegetable oil
  • 1 cup diced green bell pepper (about 1)
  • 1 cup small onions, diced about 1/2
  • 2 celery ribs diced
  • 2 cloves garlic, minced
  • Cut into 1-inch cubes , 1/2 lb skinless and boneless chicken breasts
  • 6 oz. andouille sausage cut into rounds
  • 1 tbsp tomato paste
  • White rice, 3/4 cup (long grain)
  • 1 1/2 cups chicken broth
  • 1 cup diced tomatos without drain
  • Cajun seasoning, 1 tbsp
  • 1 Bay Leaf

Instrucciones

Cook

Add oil to the pot. Add the celery, bell pepper, and onion to the pot when the oil is hot. Cook for about 3 minutes until the garlic is fragrant.

Add

Add the tomato paste, chicken, andouille and chicken. Mix the ingredients together and break the tomato paste up. Stir in the white rice until it is lightly toasted.

Stir

Add the diced tomatoes, Cajun Seasoning, bay leaf, and chicken broth.

Simmer

Cover and cook on LOW heat 30 minutes or until the rice is cooked and liquid has been absorbed. Stir the rice every 10 minutes to avoid it sticking to the bottom.

Serve hot!

Is the rice already cooked or does it need to be cooked once the pot is filled?

What's the difference between jambalaya and gumbo?

Gumbo is made with a base of roux (a mixture between flour and fat). Jambalaya uses celery, onion, bell-pepper, and celery instead of sassafras, okra, or file powder. Gumbo is also similar to a soup that's poured over rice. Jambalaya is thicker because the rice has been cooked along with the other ingredients, absorbing the flavors.

My jambalaya is too thin. How can i thicken the jambalaya?

You can cook it longer on LOW heat, with the lid off, so that any excess water will evaporate. Make a slurry using cornstarch, all-purpose flour, and water. Add it to your dish. Adding too much will ruin the flavor. You could use oil/butter instead of water to make a thickening roux. This is usually reserved for gumbos, but can be used here as well.

How to Store Easy Jambalaya

To avoid bacteria growth, let the jambalaya cool down completely. However, don't allow it to sit out longer than 2 hours. Store it in a container that is airtight in the refrigerator for up to four days. Put it in the fridge for 4 days. If you are not going to eat it within that time frame, then put it in your freezer. It should last up to 3 month. Let it thaw in the refrigerator overnight before you eat it. You can either heat it in the microwave, or on MEDIUM temperature over the stove until the internal temperature reaches 165degF the next day.

Ingredients

  • 1 tbsp vegetable Oil I used olive
  • 1 cup green bell pepper diced (about 1 )

  • 1 cup diced tomatoes undrained
  • 1 tbsp Cajun seasoning
  • 1 bay leaf

Instructions

  • Add oil to the pot. Add the celery, bell pepper, and onion to the pot when the oil is hot. Cook for about 3 minutes until the garlic is fragrant.
  • Add the tomato paste, chicken, andouille and the tomato paste. Mix the mixture with the other ingredients, and break down the tomato paste.
  • Stir the white rice until it is lightly toasted.
  • Add the diced tomatoes, Cajun Seasoning, bay leaf, and chicken broth.
  • Cover and cook on low heat for about 30 minutes or until the rice is completely cooked and liquid is absorbed. * Stir the rice every 10 minutes to avoid it sticking to the bottom.
  • Serve hot

Notes

My time was a bit longer than 30 mins, closer to 45 minutes.
The book says it makes two servings but we got two meals each. It depends how much you consume!
