Is there anything cozier on a cold winter day than a creamy Crockpot soup? This is a low-maintenance recipe that you can make in your Crockpot. It's full of potatoes and vegetables, but it's so filling that it could be served as an entree.

This recipe was developed after I spent time in the cold. I was soaked through, my hands were numb and my face was a shade of deep red that Pantone had not yet discovered. I was only motivated by the idea of eating this creamy Crockpot Potato Soup and making it myself. This soup could be said to save lives.
Crockpots are made for soups. Both go together (well, the soup in the pot). I like to add whatever ingredients I choose, then drown them in broth and cover them with a lid, knowing that I will have delicious soup in a matter of hours.

Is Creamy crockpot Potato Soup Healthy?
- This soup is packed with vegetables rich in vitamins, minerals and fiber, including potatoes, leek and celery.
- It is possible that the chicken stock contains a lot of sodium. If you are concerned about sodium, choose a version with less. It shouldn't be difficult to find.
- These toppings are high in calories, sodium and fat. Avoid them or replace sourcream with plain Greek yogurt and substitute turkey bacon for bacon.
Ingredients
You only need to include potatoes from the list of vegetables. You can do what you want with the rest, but these are just my suggestions.
- 1 yellow onion diced
- 2 cloves garlic, crushed
- Clean and chop 1 large leek
- Celery 2 sticks, chopped
- Chop 2 medium carrots
- Peel and cube 4 large potatoes
- 2 1/2 cups chicken stock
- 1 tsp of ground coriander
- Ground paprika, 2 tsp
- 1/4 tsp Black Pepper
- Fresh thyme, 1 tsp
- 8 oz low-fat cream cheese
- Cheese, crispy bacon and green onions (optional toppings).
Instrucciones

Add all the celery, onion, leek and carrots you have prepared to your Crockpot. Pour the chicken stock over and add the herbs, spices and other ingredients.

Stir, then cover and cook at low heat for 5 to 6 hours.

Variations
- Use coconut cream in place of cream cheese and vegetable stock in place of chicken. The texture won't be quite as creamy but the taste will be just as good.
- Add a teaspoon to your meal for a health boost and dazzling yellow color.
- You can omit the carrots, celery and thyme to make this soup super-quick. They are great for adding nutrients to the soup, but they are not necessary.

How to store Creamy Crockpot potato Soup

- You're trying to decide which potato to use? My recommendation is Yukons, but russets and reds also work.
