In a cute Mediterranean café, I discovered this delicious spread called baba-ghanoush. The combination of smoky, roasted eggplant, tart, lemony, and rich tahini made my taste buds do a happy dance. Now I make this all the time. This is perfect for dinner parties, or to cure those Sunday brunch hangovers.
Unknown to the average person, baba-ghanoush is an Middle Eastern dip made primarily with eggplant, tahini and olive oil. It also contains a variety of spices. It's a less popular cousin of hummus, but instead of chickpeas it's about eggplant.
This creamy baba-ghanoush is the real thing (at least, that's what I think!). Imagine it as an invitation from the Middle East to come over and enjoy its delicious flavors and textures.
Baba Ghanoush is healthy?
Absolutely! The eggplant is packed with antioxidants and fiber, as well as its beautiful purple skin. What about the tahini, then? It's loaded with protein, and your body will love the fat type. Let's not forget the olive oil, which adds heart-healthy monounsaturated fatty acids to this dish. This is a snack that's totally balanced, totally healthy, and totally delicious.
Ingredients
After I've hyped it up, this is what you need to make baba-ghanoush.
- 1 lb. Italian eggplant
- 2 cloves garlic, minced
- Lemon juice, 1 tbsp
- 1 tbsp of tahini
- Extra virgin olive oil, 1 tbsp
- Chopped fresh parsley
- 1/4 tsp cumin ground
- Salt and black pepper
- Use a pinch of smoked pepper paprika as a garnish
Instrucciones
Prep
Pre-heat the oven to 400degF. Line a large baking pan with parchment paper. Half the eggplants in half lengthwise. Olive oil can be lightly brushed on the cut side of the eggplants.
Roast
Place the eggplants cut side down in the pan. Roast the eggplants for 30 minutes or until the inside is soft and the skin has collapsed.
Scoop
Allow the eggplant to cool down for a couple of minutes. Remove the flesh using a large wooden spoon. The skin should be thrown away.
Strain
Put the flesh in a strainer with a mesh and allow it to rest for several minutes. This will help release as much moisture from the eggplants as possible.
Stir
Transfer the drained edamame to a bowl, and add the garlic minced and lemon juice. Stir the eggplant with a fork to break it down.
Add
Pour the tahini into the bowl, and drizzle the olive oil slowly. Stir until mixture is pale, creamy and smooth.
Stir
Add the parsley, cumin, salt and pepper.
Sprinkle
Transfer the baba-ghanoush into a bowl. Sprinkle the smoked paprika over top and drizzle some more olive oils. Serve with pita or any vegetables you like.

However, younger generations are leading the charge when choosing organic food. Millennials are twice likely to choose organic food than the baby boomers. And young adults under 35 years old account for 25% of all organic food purchases.

Here are my tips for finding cheap organic meats. I'll also tell you how much each pound costs. You will be able to make the most of what you have purchased.
You don't need to spend a lot of money to eat healthily. Sometimes, it takes a bit of creativity to save money while eating well. Here's my list of ways to keep your food costs down while enjoying organic meat's benefits.
- Shop at wholesale clubs - Sams Club or Costco are great places to buy bulk foods such as chicken breasts and pork chops. You may be able to get large quantities of meat for as low as 50 pounds if your home is near one of these stores. This ensures that meat is not wasted. And if you buy it in bulk, you can freeze it, so it lasts longer.
- You can shop online for meat at great prices. Amazon offers Prime Pantry weekly deals, including free shipping for orders above $35 They offer discounts for beef roasts and ground beef as well as lamb steaks, lamb steaks, pork loins, and other items. You can easily browse their website to see what is available at different times.
- Locate a farmer in your area. Local farmers are usually cheaper than big box retailers as they don’t pay high stocking fees. They know exactly what the animals ate and drank to ensure they are fully informed about what is in their bodies.
