This simple Chocolate Strawberry Brioche French toast is crusted in coconut, coconut whip cream, and chocolate-covered strawberries. It's a creamy, crunchy breakfast that's perfect for Valentine's Day.

Personal, I'm like Belgium. Is it Sweden or Belgium? Whatever, I am just netural. I've got one foot in the I-wanna-celebrate-because-then-the-hubs-has-to-take-me-for-fancy-dinner-and-buy-me-flowers corner, and the other foot in the what-a-dumb-holiday corner.

How-ev-er, no matter if you're on team ooey-gooey lovey-dovey goodness or team why-does-February-14-even-exist, I KNOW that you like healthy high protein french toast.

And even if you're one of those rare non-french-toast-eating people, you'll like this one.

The outside of the coconut is covered with crunchy, crispety coconut flakes.

Then, CHOCOLATE Coconut whipped Cream and Chocolate Strawberries are added. Can you ever go wrong by dipping sweet, fresh strawberries in smooth, rich chocolate?

No is the correct answer. You cannot.

I was unsure whether to use whole wheat bread or my normal healthy food-loving methods. It's Valentine's Day, which means that, as with ALL holidays, the calories do not count.

Plus, just like in our Kale Salad we use superfood coconut. Truvia. You can be proud of your healthy choices.

Anyways. I used soft, buttery Brioche: the king of breads. If you are like me and consider yourself to be a French Toast connoisseur, (is this a thing?) You'll agree the bread is KEYKEYKEY.

You don't mess around with keykeykey 100. Shenangians are IMPORTANT.

Chocolate Strawberry Brioche French Toast recipe

Valentine's Day is the perfect time to celebrate with this delicious chocolate strawberry Brioche French toast. One sweet, amazing breakfast.

Ingredients

French Toast

  • 3/4 cup Light Coconut Milk
  • 2 Eggs
  • 2 tablespoons Truvia Plus 2 tablespoons powdered truvia, divided
  • 1/4 teaspoon Pure Vanilla Extract
  • 4 Brioche 1 inch thick
  • 1 cup Unsweetened Coconut Flakes
  • 1 tablespoon Coconut Oil

Strawberries for the Strawberries

  • 2 ounces Semi-Sweet Chocolate Plus additional for drizzling, if desired
  • 1 teaspoon Coconut Oil
  • 1 cup Strawberries Cut in half

Coconut Whip Recipe

  • 1 13.5 Can Full Fat Coconut Milk After 24 hours in the fridge
  • 1/2 teaspoon Pure Vanilla Extract
  • 2 1/2 teaspoons Unsweetened Cocoa Powder
  • 1 1/2 tablespoons Truvia Powdered, or more to taste

Instructions

  • In a large bowl, combine the eggs, light coconut milk and 2 tablespoons of regular Truvia with vanilla extract.
  • The Brioche slices should soak in the egg mixture for 10 minutes. Flip them over and let the other side soak for an additional 10 minutes.
  • While the bread soaks in the water, melt 1 tablespoon coconut oil and the chocolate together using microwaves at 20-second intervals. Stir between intervals until the chocolate has melted and is smooth.
  • Place half of each strawberry on a plate lined with parchment paper. Place the strawberries in the fridge to allow the chocolate to set.
  • Flip the coconut milk upside down after removing it from the fridge. Drain the liquid out of it (it is great for smoothies). Pour the cream that has hardened at the bottom of the can in a large bowl.
  • Add the Truvia powder, Truvia powdered cocoa and vanilla extract to the coconut cream. Beat with a mixer at high speed until fluffy. Place in the refrigerator until you are ready to use.
  • Heat the griddle to medium temperature with the 14 cup of coconut oil remaining.
  • Spread the remaining 2 tablespoons of Powdered Truvia and coconut flakes onto a large shallow plate. Dip the bread in the coconut flakes and lightly press to adhere the flakes to the bread.
  • Cook until golden brown. Flip the pancakes and cook on the other side until it is also golden.
  • Sprinkle with coconut cream, extra chocolate and Strawberries.
