- Onion Garlic: Alliums are classic flavors that enhance this dish.
- Baby Bella mushrooms: The mild flavor of these mushrooms and their meaty texture add a delicious earthy component to any dish.

Chicken cacciatore is great served with a variety of pastas including plain pasta, Pasta Primavera or Mushroom rice, Balsamic roasted vegetables, and Garlic Parmesan Polenta. You can also serve it with a crunchy side salad and No-Knead Bread to soak up the delicious sauce.
Can I omit the wine?
Red wine can be omitted to reduce the cost of this dish or to meet your own personal tastes. You can use red cooking wine, which is cheaper and lasts a long while in your pantry. Or you can just use chicken broth.
HOW TO USE LEFTOVER CAPER
After making chicken cacciatore, you'll probably have some leftover capers. Capers left over can also be kept in the fridge, submerged in brine for up to three months. I highly suggest making a batch of Chicken Piccata or Pasta Puttanesca with your leftover capers, but they're also great when added to pasta salads, tuna salad, deviled eggs, or potato salad.
How to Store Leftovers
Once cooked and cooled, this chicken cacciatore can be stored in an air-tight container in the refrigerator for up to 3 days or frozen for longer storage. Reheat in a saucepan until warmed through and bubbling. It'll stay fresh in the freezer for up to 3 months and can be thawed overnight in the refrigerator before reheating.

- 6 bone-in skin-on chicken thighs $6.65

Instructions

Place the chicken thighs in a bowl. Toss with the salt, pepper, and flour until fully coated.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once heated, add in the chicken thighs, cooking on both sides until browned. Then, transfer to a plate.

Add in 1 tablespoon of olive oil, the onion, and a sprinkle of salt. Cook for a few minutes until softened.

Add in the garlic, mushrooms, and red bell pepper. Sprinkle with more salt and cook for 3-4 minutes until the mushrooms are tender.

Pour in the red wine and scrape up the brown bits from the bottom of the pan.

Add in the crushed tomatoes and capers.

Return the chicken thighs to the pan, bring the mixture to a simmer, and cover the pan, cooking for 25-30 minutes until the chicken is tender. Uncover the pan, and cook for another 5 minutes.

Place 6 bone-in skin-on chicken thighs in a bowl. Toss with 1 tsp salt, 1/4 tsp pepper, and 1/4 cup all-purpose flour until fully coated.

Return the chicken thighs to the pan, bring the mixture to a simmer, and cover the pan, cooking for 25-30 minutes until the chicken is tender. Uncover the pan, and cook for another 5 minutes. Garnish with chopped fresh basil or parsley, if desired.

Make sure you only buy chicken from chicken farms that are fed organically and have never been given antibiotics. Chickens can eat both animal and plant food. Omnivorous chickens possess a digestive tract made up of a crop.

In this post I'll share some tips and techniques for buying organic meat that won't break the bank.
Here are some tips to help you find low-cost organic meats. Also, how much per pound they cost. Learn how to get maximum value from the products you buy.
To eat well, you don't have to spend a lot. Sometimes, you have to use your creativity to save money while still eating well. Here are my top tips for keeping food costs down and still enjoying the many benefits of organic meat.
- Shop at wholesale clubs - Sams Club or Costco are great places to buy bulk foods such as chicken breasts and pork chops. If you're lucky enough to live near one of these stores, you can often get deals on large quantities of meat (up to 50 pounds). This will ensure that you don't waste any meat. If you buy it in bulk you can freeze it so it lasts more.
- Shopping online is easy - There are tons of websites that sell meat at reduced prices. Amazon has Prime Pantry, a weekly sale that offers free shipping for orders over $35. There are also discounts on lamb steaks (lamb steaks), ground beef, pork loins, and beef roasts. You can easily browse their website to see what is available at different times.
- Find a local farmer - Local farmers usually charge less than big box retailers because they do not pay considerable fees to stock their shelves. They also know what their animals ate and drink so they can tell exactly what is inside.
