Russets are firmer than Yukon Gold potatoes and crisp up nicely, but the inside of the russet potato won’t turn out as velvety as the Yukon Gold, so I save russets for baking. Red potatoes have thin skin and can also crisp nicely; however, you must be careful since they can become too soft quickly (which is why they are great in salads).
