We tested eggs from a local family farm in Antigonish, Nova Scotia against conventionally farmed eggs and found that their free-range yolks were more richly colored than standard eggs. They also had higher lutein and zeaxanthin levels, two important antioxidants that protect the eye from damaging UV and high-intensity blue light.

These results indicate that hens raised in the wild have a more natural diet and that it’s possible to make high-quality, affordable eggs that are closer to their natural state. Ultimately, it’s up to individual shoppers to decide which eggs are right for them based on their priorities. In addition to the nutrient punch that eggs pack, they also deliver the perfect texture. The best eggs have a slightly golden-brown hue and are not too runny or too thick.

The best eggs are from hens that are raised humanely and have access to the outdoors. That’s why it is important to understand the different claims on egg cartons like Free Range, Pasture Raised, Certified Humane, Organic and Cage-Free.

The term free range is a bit misleading because it does not mean that the hens roam around freely or have large amounts of outdoor space. Rather, it simply means that the hens aren’t housed in cages and have access to outdoor spaces when the weather permits. Third party certification is the best way to know what a hen’s outdoor space should be. Freshness

Eggs are full of nearly every nutrient you need to build muscle, protect your eyesight, support brain function and more. They're also low in calories and carbs (hello, high-protein dieters), and are rich in Vitamin D and the eye-healthy fats lutein and zeaxanthin.

When you buy eggs from a local farm, they're likely much fresher than the ones you find in the grocery store. As an egg ages, it loses moisture and is replaced by air. That's why a freshly-laid egg sinks to the bottom of a glass of water while a stale one tilts slightly at one end or even floats in the middle, if it's still intact.

To determine whether an egg is fresh, fill a bowl with enough water to completely cover it. Then gently float the egg in the water. A very fresh egg will sink to the bottom and lie perfectly straight. If it stands up slightly at one end, it's still good but not quite as fresh. A stale egg will float to the top, indicating it's too old to use.

Nutrition

Eggs are a great source of protein and many essential vitamins. Two eggs provide about a third of the daily protein needs of an average woman and a quarter for an average man. They also contain healthy fats, B vitamins and choline.

Egg certification schemes help consumers understand the conditions under which eggs are produced. The "free-range" label on egg cartons means that the hens have access to outside space. However, there's no regulatory oversight on how much or whether the birds actually go outside or if the outdoor space is suitable for their welfare.

  • Biodegradable - The product will eventually be broken down into harmless parts when it is disposed of.
  • Pesticide-Free - No pesticides have been used in the growing and harvesting process.
  • GMO-Free: This means that no product ingredient contains genetically engineered organisms.
  • Certified Organic means all ingredients were grown in ways that preserve the soil, water and air.
