You can also look for the labels of Vital Farms, Family Homestead, Oliver’s Organic, and Pete and Gerry’s.

With egg prices soaring, you might have noticed more cartons in your grocery store carrying claims like "free-run," or "cage free." But what do these labels mean?

The most important thing to look for, Bourns says, is a third party certifier. He recommends looking for those stamped with the Certified Humane, or Animal Welfare Approved seals. "That means the farmers are following standards that impose real animal welfare," he explains.

For example, a farm that is Certified Humane must ban routine beak trimming, and provide the chickens with plenty of space to roam outdoors. Hens whose diet includes pasture-grown grasses also tend to have richer yolks, with more of the antioxidants lutein and zeaxanthin, which help keep your eyes healthy.

But if you don't want to buy eggs from a brand that follows those standards, he says, then look for those labeled as "free range." That just means that the hens can access an outdoor run, but it doesn't have to be very large.

Eggs are full of nearly every nutrient the human body needs and want. They’re a great source of protein (important for vegetarians and vegans) and omega-3 fatty acids, as well as vitamin E and beta-carotene.
