But when the process of methylation breaks down, high levels of homocysteine build up in your bloodstream. These levels are associated with heart disease, neurological problems and mood disorders like anxiety, depression and fatigue.

Your body uses the B vitamins folic acid, vitamin B12 and B6 to break down homocysteine and convert it back to methionine. However, high levels of homocysteine may also indicate a deficiency of these nutrients or the presence of a gene mutation (MTHFR) related to vitamin metabolism [2, 3].

Other factors that can increase your risk of developing abnormal homocysteine levels include smoking and a sedentary lifestyle. Avoiding processed and refined foods, incorporating more vegetables, fruits, legumes and whole grains into your diet, exercising regularly and reducing stress levels can help mitigate symptoms caused by elevated homocysteine.

Lowers Your Risk of Heart Disease

Many studies show that organic foods contain more heart-healthy nutrients than their conventional counterparts. For example, organic tahini is rich in magnesium, calcium, iron, zinc, and antioxidants. In addition, tahini is made from sesame seeds, which are known to improve artery health and lower blood cholesterol.

The use of pesticides, fungicides, and herbicides in nonorganic farming increases your risk of developing heart disease and other health issues. Exposure to pyrethroid insecticides, which are often used in nonorganic farming, has been linked to higher rates of heart disease and cancer.

However, the researchers admit that these findings may be influenced by a range of confounding factors such as lifestyle and energy intake. Moreover, their follow-up time was short. Therefore, further research is required. Nevertheless, the findings are promising. Besides, the dietary changes recommended by major medical groups, such as maintaining a healthy weight and avoiding processed foods, can also lower your risk of heart disease.

Helps Prevent Cancer

Researchers from the Institut National de la Sante et de la Recherche Medicale in France found that individuals who eat mostly organic foods enjoy a 25 percent lower cancer risk. The study followed 68,946 volunteers over a five-year period. During this time, 1,340 new cases of cancer were diagnosed. This included 459 cases of breast cancer, 180 prostate cancers, 135 skin cancers, 99 colorectal cancers and 47 non-Hodgkin lymphomas.

Researchers categorized participants into four groups based on how frequently they consumed organic food, using a scale of never, occasionally, regularly and often. They also assessed other factors, including dietary habits and lifestyle.

Individuals who ranked in the top quartile of organic food consumption experienced a 25 percent lower cancer risk than those who consumed conventionally grown produce rarely or never. This reduction in cancer risk was due mainly to an 86 percent decrease in non-Hodgkin lymphoma and 34 percent less post-menopausal breast cancer, both of which are associated with pesticide exposure.
