Infusing herbs into oils, vinegars, butters, and salts is a back-of-house restaurant secret that elevates ordinary dishes! These preparations are simple to concoct and also make beautiful gifts.

Hot infusions draw out vitamins, enzymes, and aromatic volatile oils. They are ideal for nourishing herbs such as comfrey leaf, ginger root, nettle leaf, or red clover blossoms.

Infuse Oils

Oils infused with herbs impart their flavor to dishes and nourishing plant constituents (like fatty acids and natural essential oils) are drawn out of the herb into the oil.

Unlike essential oils that have been extracted by distillation, herb-infused oils are safe to consume in large quantities and can even be used directly on the skin. For a quick and easy herbal oil infusion, place the desired amount of dried herb(s) into a clean jar, then cover with enough olive or jojoba oil to reach the brim of the jar.

Typically, distilled white vinegar is used for this infusion since it has a clean taste and works well with herbs. Wine vinegars, like sherry and moscato, are more expensive but will add a complex flavor to your infusion.

To make your infusion, simply pack a washed and dried herb into a sterilized jar and pour in the vinegar of your choice. Then, seal the jar with a non-corrosive lid (metal will corrode). Let the infusion sit in a dark and cool place for up to three weeks.

For example, a cup of nettle tea contains only 5-10 mg of calcium while a nourishing herbal infusion of the same amount of nettle will contain up to 500 mg.

Adding herbs to oils is another easy way to infuse dishes with rich, nuanced flavors. You can use this technique to make herb-infused cooking and salad dressings, or as the basis for natural body care products such as healing salves and ointments.

This simple recipe uses a combination of nourishing herbs including nettle, alfalfa, oat straw and rose hips. This mineral rich infusion is delicious on its own or with a dash of lemon. For example, the chamomile herb helps relieve stress. This means that if you feel stressed out, you may benefit from taking chamomile tea. Chamomile tea has been shown to reduce anxiety and nervous tension.

In addition, chamomile tea has been proven effective in relieving insomnia.

Chamomile tea has many other benefits, including its ability to ease stomach aches and gas pains and even improve digestion.

Another popular healing herb is Echinacea. Echinacea is known for helping to fight infections and boosting the immune system.
