Herbs and Spices For Spanish-Style Grilled Meats

Herbs and spices are an essential part of Spanish cooking. They add a distinct flavor to dishes that no other cuisine can match.

While fresh herbs can be used in any dish, dried ones are more concentrated and can help cut down on preparation time. Use 1/4 to 1/3 of the amount that calls for fresh herbs and spices when using dried.

1. Oregano

Oregano is one of the most widely used herbs in the world, and has a long history as an essential ingredient in both Mediterranean and Mexican cuisines. It is available year-round in both fresh and dried forms.

Those who have heard that grilling meats over high temperatures increases cancer risk may be surprised to learn that fruit and veggies are far safer choices on the BBQ. That’s because muscle proteins mutate when they are cooked at high temps, producing heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs), which can lead to various cancers in humans.

2. Paprika

Paprika is an important part of Spanish cooking. It’s used to season chorizo, stews, bravas sauce and more.

It is a spice made from red peppers. It has a mild flavor and is not as hot as chili peppers, which provide a kick to certain dishes.

In addition to its mild flavor, paprika contains many nutrients that promote health. For example, one tablespoon of paprika contains 100 percent of the recommended daily intake of vitamin A.

Moreover, it contains carotenoids, which are a family of antioxidants that help protect the body from disease. These nutrients also lower inflammation, which can cause autoimmune diseases.

3. Saffron

Saffron, which is also known as crocus sativus, is an expensive spice that can be used to add color and flavor to a wide variety of dishes. It’s a great match for seafood, pastas, and poultry.

A little goes a long way, so you don’t need to be a gourmet cook to use saffron in your food. Adding saffron threads to soup, pasta water, or rice water will impart a beautiful golden hue and flavor to your dish.

4. Garlic

It has many health benefits, including the ability to promote a healthy heart and liver. It contains a number of sulfur compounds, most notably allicin, which helps reduce high blood pressure and hardening of the arteries.

It is an important source of antioxidants, vitamin c, and manganese. It is also an anti-bacterial and antifungal agent. It's also a great detox food, helping your body get rid of toxins from the inside out.

5. Rosemary

Rosemary is a versatile herb that works well in stews, soups and even roasts. Use it to season meats, especially lamb and pork. It also pairs nicely with potatoes, peas and mushrooms.

Fresh rosemary can be found in bunches or small plastic containers at the grocery store. Rinse the bunch under cold water and pat dry before using.

Dried rosemary is available all year round, so it can be used in place of fresh rosemary during the winter months when you might run out of fresh herbs at your local grocer. It is a good substitute because the flavor is more concentrated in the dried form.

You can also substitute dried thyme for fresh rosemary, but it will have a less robust flavor and won’t be quite as potent. You’ll need about half the amount of fresh thyme to make up for the loss of flavor.

Which plant can heal wounds?

Plants release molecules called phytochemicals when they are injured. These chemicals act as antioxidants, which protect cell membranes from damage and promote healing.

Phytochemicals found in plants include flavones (found in citrus fruits), terpenoids (present in mint leaves), and polyphenols (common in berries).

In addition to these protective compounds, plants contain proteins, vitamins, minerals, amino acids, fatty acids, and carbohydrates that support the body's natural processes of healing.

The best way to use plants to heal wounds is to consume them directly. However, there are ways to apply the power of plants to treat wounds without eating them.

First, soak a cotton ball in an extract from the St John's Wort herb. This product contains salicylic acid, which helps reduce inflammation.

Next, place the soaked cotton ball on the wound. Avoid applying the herb directly to open cuts, burns, or puncture wounds. If you feel any burning sensation, remove the herb immediately.

You may also find that placing a few drops of essential oil on the affected area promotes faster healing. Lavender essential oil reduces swelling and speed recovery; rosemary stimulates blood flow and increases circulation; peppermint relieves headaches and muscle aches.

If you want to try your hand at growing some of your medicinal herbs, here are some tips:

  • Start with small pots, so you don't end up with too much of one particular type of plant.
  • Grow several different types of herbs together. The same goes for flowers and vegetables. Mixing it up will ensure you get all the benefits of each plant.
  • Use organic fertilizer if you're growing your herbs indoors. Non-organic fertilizers may be harmful to your health.
  • Harvest regularly. You'll enjoy the freshness of homegrown herbs, but leave enough time between harvests to allow the soil to replenish itself.
  • Be careful not to overwater your plants. Overly wet soil encourages mold growth, which isn't suitable for your herbs.
  • Wash your hands after handling your herbs. You don't want to risk spreading bacteria onto your plants!


Is it okay to use dried herbs instead of fresh ones?

It is best to pick up fresh herbs whenever possible when using herbs.

Although dried herbs are convenient, they don’t provide the same benefits as fresh herbs.

Fresh herbs contain essential oils that give your food a unique flavor. These oils help preserve the nutrients within the herb.

Dried herbs lose all their flavor after drying, so they cannot replace fresh herbs.

You should only use dried herbs if you absolutely must. Otherwise, you should get your fresh herbs from the market.
