Cooking with Rosemary Fragrant Herb for Savory Delights


Rosemary is a robust herb that pairs nicely with rich meats like lamb, roasted potatoes and vegetables, seafood dishes such as barramundi and shrimp, and even sweet desserts. It's also a fantastic ingredient for cocktails!

The needle-like leaves of rosemary (Rosmarinus officinalis) can be quite tough, so it's best to chop finely. Keep in mind that stems are not edible and should be removed before using.

Woody and piney with a hint of pepper, rosemary has a distinctive flavor that goes just as well with hearty meat dishes as it does with zingy desserts and cocktails. Use it to add a rich flavour to potatoes, in breads and even in dips (try it with goat cheese or sourdough). To make rosemary salt, combine coarse sea salt with a handful of sprigs of rosemary that have been finely chopped (or crushed in a mortar and pestle). The rosemary is then infused into the salt for at least an hour. This can be stored in a clean, dry glass bottle or jar for use.
